Directions

  2. Cook the rotini pasta according to package instructions until just al dente. Do not overcook, or the protein matrix will break down and make the salad mushy.
  3. Drain the pasta in a colander and rinse immediately under cold running water to stop the cooking process and wash away excess surface starch.
  4. Transfer the cooled pasta to a large mixing bowl and toss with 1 tablespoon of olive oil until lightly coated.
  5. In a medium bowl, whisk together the mayonnaise, sour cream, ranch seasoning, and black pepper until smooth and fully emulsified.
  6. Add the crumbled bacon, cubed cheddar, diced red bell pepper, minced red onion, and thawed peas to the bowl with the pasta.
