- 45g (3 tbsp) unsalted butter
- 30g (1/4 cup) all-purpose flour
- 480ml (2 cups) whole milk
- 240ml (1 cup) low-sodium chicken broth
- 1 tsp Diamond Crystal kosher salt
- 1/2 tsp freshly cracked black pepper
- 225g (2 cups) sharp white cheddar cheese, freshly grated
- 115g (1 cup) mozzarella cheese, freshly grated
- 300g (2 cups) cooked chicken breast, shredded
- 150g (1 cup) frozen peas, thawed
- 60g (1 cup) panko breadcrumbs
- 2 tbsp extra virgin olive oil
Directions
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- Bring a large pot of salted water to a boil and cook the pasta for 2 minutes less than the package instructions for al dente. Drain and set aside.
- In a large saucepan over medium heat, melt the butter, then whisk in the flour and cook for 1 minute to remove the raw flour taste.
- Slowly pour in the milk and chicken broth, whisking constantly to prevent lumps, and simmer until the sauce thickens enough to coat the back of a spoon.
- Remove the pan from the heat and stir in the kosher salt, black pepper, cheddar, and mozzarella until completely melted and smooth.
- Fold the cooked pasta, shredded chicken, and peas into the cheese sauce until everything is evenly coated.
- Transfer the mixture to the prepared baking dish, top evenly with panko breadcrumbs mixed with olive oil, and bake for 25 to 30 minutes until bubbling and golden brown.
Notes
- We highly recommend using Diamond Crystal kosher salt; if you are using Morton's or fine table salt, cut the volume in half (use 1/2 teaspoon instead of 1 teaspoon) to avoid over-salting.
- Always grate your own cheese from a block rather than buying pre-shredded bags. Pre-shredded cheese is coated in potato starch or cellulose to prevent caking, which disrupts the protein matrix and prevents the cheese from melting into a smooth, cohesive sauce.
- Keep a close eye on the panko topping during the last 5 minutes of baking. If your oven has uneven heat distribution, the breadcrumbs can turn from golden to scorched in a matter of seconds; tent with foil if it browns too quickly.

The microwave works in a pinch.
