  • 2 tbsp tomato paste
  • 1.5 tsp Diamond Crystal kosher salt
  • 0.5 tsp freshly cracked black pepper
  • 50g (3.5 tbsp) unsalted butter
  • 50g (0.4 cup) all-purpose flour
  • 700ml (3 cups) whole milk, warmed
  • 0.25 tsp freshly grated nutmeg
  • 300g (3 cups) low-moisture mozzarella cheese, shredded
  • 50g (0.5 cup) Parmigiano-Reggiano cheese, freshly grated
  • 12 no-boil lasagna sheets

Directions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add the ground beef and Italian sausage, breaking it up with a wooden spoon until browned and cooked through, about 8-10 minutes.
  2. Stir in the diced onion and minced garlic. Cook for 5 minutes until the onions are soft and translucent, then stir in the tomato paste, cooking for 2 minutes to caramelize.
  3. Pour in the crushed tomatoes, Diamond Crystal kosher salt, and black pepper. Reduce heat to low and simmer uncovered for 30 minutes, stirring occasionally, until the sauce is thick and rich.
  4. While the meat sauce simmers, melt the unsalted butter in a medium saucepan over medium heat. Whisk in the flour and cook for 2 minutes to eliminate the raw flour taste.
  5. Gradually whisk in the warm whole milk, a splash at a time, to prevent lumps. Bring to a gentle simmer, whisking constantly until your forearm burns slightly, until the béchamel thickens enough to coat the back of a spoon, then stir in the grated nutmeg.
  6. Preheat your oven to 190°C (375°F). Lightly grease a 9x13-inch baking dish.
  7. Spread a thin layer of meat sauce on the bottom of the dish. Arrange 3 or 4 lasagna sheets on top, followed by a layer of meat sauce, a drizzle of béchamel, and a handful of shredded mozzarella.
  8. Repeat the layers (pasta, meat sauce, béchamel, mozzarella) three more times. Top the final layer of pasta with the remaining béchamel, meat sauce, mozzarella, and the grated Parmigiano-Reggiano.
  9. Cover the dish tightly with aluminum foil, tenting it slightly so it doesn't stick to the cheese. Bake for 35 minutes, then remove the foil and bake for an additional 15 minutes until the top is golden-brown and bubbling.
  10. Let the lasagna rest for 15-20 minutes before slicing. This allows the protein matrix to set, ensuring clean, beautiful slices.
