This creamy chicken Caesar pasta combines tender seared chicken breast, penne, and a velvety garlic-parmesan cream sauce infused with fresh lemon and black pepper for an incredibly comforting 30-minute weeknight dinner.

Creamy Chicken Caesar Pasta
Why This Recipe Works:
  • Stable Dairy Base: Heavy cream and chicken broth create a sturdy emulsion that resists splitting, unlike mayonnaise or egg-based dressings.
  • Starch Water Binding: Reserving and stirring in pasta cooking water helps bind the fats and liquids into a glossy, restaurant-quality glaze.
  • Off-Heat Cheese Integration: Whisking the Parmesan off the direct heat prevents the cheese from turning stringy or clumping at the bottom of your pan.

I still remember the humid Tuesday evening I tried to turn a bottle of store-bought Caesar dressing into a warm pasta sauce for my sister's birthday. I dumped the cold dressing straight into a screaming-hot pan of penne, expecting a silky restaurant-style glaze. Instead, the emulsion broke instantly, leaving me with oily, separated puddles and sad, scrambled clumps of egg yolk clinging to the pasta.

It was a spectacular, greasy disaster.

The physics of Caesar dressing make it notoriously hostile to high heat. Because it relies on a delicate egg-and-oil emulsion, direct thermal mass causes the proteins to coagulate and the fat to split.

To solve this, we build a stable cream base first, using heavy cream and chicken broth to create a robust protein matrix that won't break. We then whisk in freshly grated Parmesan cheese and a splash of fresh lemon juice off the heat, mimicking the classic Caesar flavor profile without risking a curdled mess. It is hands down the most foolproof way to get that rich, garlicky cling without any of the culinary heartbreak. If you love comforting pasta bakes, this technique is just as game-changing as our classic chicken fettuccine alfredo.

Best of all, you do not need any fancy equipment or culinary degrees to pull this off on a chaotic weeknight. You probably already have the garlic, parmesan, and pasta sitting in your pantry right now.

Ingredients

  • 450g penne pasta (or rotini)
  • 2 large boneless, skinless chicken breasts (about 500g), sliced into thin cutlets
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 120ml low-sodium chicken broth
  • 240ml heavy cream
  • 100g freshly grated Parmigiano-Reggiano cheese
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Diamond Crystal kosher salt (use 1/2 teaspoon if using Morton's)
  • 1/2 teaspoon freshly cracked black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups fresh baby spinach (optional, for a pop of green)

Directions

  1. Bring a large pot of salted water to a rolling boil. Cook the penne pasta according to package instructions until al dente. Before draining, carefully scoop out and reserve 120ml of the starchy pasta cooking water, then drain the pasta and set aside.
  2. Pat the chicken cutlets completely dry with a paper towel and season both sides with the kosher salt and freshly cracked black pepper. Heat the olive oil in a large, heavy-bottomed skillet over medium-high heat.
  3. Add the chicken to the skillet. Press down gently with your tongs to ensure even contact with the pan, and sear for 4 to 5 minutes per side until a deep golden-brown crust forms and the internal temperature reaches 74°C. Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into bite-sized strips.
  4. Reduce the skillet heat to medium and melt the butter. Add the minced garlic and sauté for about 1 minute, stirring constantly to prevent the garlic from browning or burning.
  5. Pour in the chicken broth, using a wooden spoon to scrape up all the delicious browned bits stuck to the bottom of the pan. Let the liquid simmer and reduce by half, which takes about 3 minutes.
  6. Pour in the heavy cream and bring the mixture to a gentle simmer. Cook for 3 to 4 minutes until the sauce begins to thicken slightly and coat the back of a spoon. If using spinach, stir it in now until it wilts.
  7. Remove the skillet from the heat entirely. Whisk in the grated Parmigiano-Reggiano cheese, lemon juice, and red pepper flakes until the cheese is completely melted and the sauce is velvety smooth.
  8. Add the cooked penne and sliced chicken back into the skillet. Toss everything together vigorously, splashing in a few tablespoons of the reserved pasta water as needed to loosen the sauce and help it cling beautifully to every piece of pasta. Serve immediately with extra grated cheese on top.

Notes

  • Salt Conversion: I highly recommend using Diamond Crystal kosher salt for this recipe; if you are using Morton's kosher salt or fine table salt, cut the volume in half to prevent the dish from becoming overly salty.
  • The Science of Cheese: Always grate your Parmigiano-Reggiano fresh from a block. Pre-packaged grated cheese is coated in cellulose and anti-caking agents that prevent it from melting smoothly, which will make your cream sauce gritty.
  • Workflow Warning: Do not let the garlic brown past a pale blonde color before pouring in the chicken broth. Burnt garlic turns bitter instantly and will ruin the delicate dairy base.
  • Storage Behavior: As this pasta sits in the fridge, the starch will continue to drink up the liquid, causing the sauce to tighten significantly. See the reheating tips below to restore its original silky texture.

Serving Suggestions

This rich and comforting pasta pairs beautifully with bright, acidic sides that cut through the velvety cream sauce. Here are a few of our favorite ways to round out the meal:

  • A crisp, cold romaine salad tossed with our classic homemade caesar salad dressing and extra croutons.
  • Thick slices of warm garlic bread, or even a decadent garlic bread grilled cheese for the ultimate carb-on-carb experience.
  • Oven-roasted broccoli florets or charred asparagus spears tossed in lemon zest.
  • A chilled glass of high-acid white wine, such as a Pinot Grigio or Sauvignon Blanc, to balance the richness of the parmesan.

Storage and Reheating

Store any leftover pasta in an airtight glass container in the refrigerator for up to three days. Because of the high fat content in the cream and cheese, the sauce will solidify into a thick, unappealing gel once cold. Do not panic when you see this; it is completely normal physical behavior for a dairy-heavy emulsion.

Never, ever microwave this pasta on high power.

Doing so will instantly break the delicate emulsion, leaving you with a puddle of yellow oil and dry, rubbery chicken. Instead, reheat it gently on the stovetop over medium-low heat.

Splash in two tablespoons of milk, chicken broth, or water to help loosen the starch bonds. Stir constantly with a silicone spatula, scraping the bottom of the pan until the sauce relaxes back into its original, velvety state. If you are looking for a cold alternative for meal prep, our chicken caesar tortellini salad is a fantastic make-ahead option that requires zero reheating.

Ingredient Substitutes

If you find yourself missing an ingredient or want to adapt this recipe to what is currently in your fridge, here are some easy swaps:

  1. The Pasta: Swap the penne for rotini, farfalle, or rigatoni. If you want a fun twist, try using cheese tortellini as we do in our chicken caesar tortellini salad.
  2. The Protein: Leftover rotisserie chicken works beautifully here to save time. Alternatively, you can use sliced turkey breast or even sautéed shrimp.
  3. The Greens: If you want to sneak in some extra veggies, stir in a few handfuls of baby spinach or chopped kale right at the end until wilted.
  4. The Cheese: Pecorino Romano can replace the Parmesan for a sharper, saltier bite, but adjust the added salt accordingly.

This dish has quickly become my ultimate Friday night rescue meal when the week has been long and my brain is completely fried. It delivers all the comforting, savory depth of a classic Caesar salad but wraps it in a warm, carb-heavy hug. Pour yourself a cold drink, put on some music, and enjoy every single creamy bite.
