- 12 lasagna noodles (no-boil or parboiled)
- 4 cups shredded cooked chicken thighs
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk, warmed
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 tbsp Diamond Crystal kosher salt
- 1/2 tsp freshly cracked black pepper
- 1/4 tsp freshly grated nutmeg
- 2 cups shredded low-moisture mozzarella cheese
- 1 cup freshly grated Parmigiano-Reggiano
- 1 cup ricotta cheese
- 2 cups fresh baby spinach, chopped
Directions
- Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter.
- Melt butter in a large saucepan over medium heat. Whisk in flour and cook for 2 minutes to eliminate the raw flour taste.
- Slowly pour in warm milk and heavy cream, whisking constantly to prevent lumps. Simmer until the sauce thickens and coats the back of a spoon.
- Remove sauce from heat. Stir in garlic, Diamond Crystal kosher salt, black pepper, nutmeg, and half of the Parmigiano-Reggiano until smooth.
- In a bowl, mix the shredded chicken with the chopped spinach and ricotta cheese.
- Spread a thin layer of the cream sauce on the bottom of the prepared baking dish. Lay 3 to 4 lasagna noodles on top.
- Spread one-third of the chicken-ricotta mixture over the noodles, drizzle with more cream sauce, and sprinkle with mozzarella. Repeat layers twice more.
- Top with the final layer of noodles, remaining cream sauce, mozzarella, and Parmigiano-Reggiano.
- Cover loosely with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbling and golden brown on top. Let rest for 15 minutes before slicing.
