A cozy, ultra-creamy chicken noodle casserole made entirely from scratch without canned soup, featuring tender egg noodles and a golden, cheesy breadcrumb topping.

Why This Recipe Works:
  • Undercooking the egg noodles prevents them from turning mushy during the oven bake.
  • A scratch-made roux with chicken broth and heavy cream creates a stable emulsion that won't split.
  • Freshly grated sharp cheddar melts smoothly into the protein matrix without the graininess of pre-shredded cheese.

It was a rainy Tuesday when my Pyrex shattered.

My forearms were aching from a long day of typing, my grip slipped, and suddenly dinner was a sad puddle of glass and cream sauce on the linoleum.

I actually cried over that lost dinner, mostly because I had spent two hours trying to make a scratch-made sauce that ended up tasting like floury paste anyway, a total failure that made me want to crawl into bed with a sleeve of saltines. But that disaster forced me to obsess over how to build a casserole that is actually worth the dishwashing.

Most homemade chicken casseroles fail because the pasta absorbs too much liquid. It turns into a gummy mess after a day in the fridge.

Think about this in terms of physics: starch gelatinization continues even after you pull the bake from the oven, meaning those egg noodles will relentlessly drink up your sauce until there is nothing left but sadness.

The fix is surprisingly simple.

We need to undercook the noodles by exactly three minutes and build a sauce with a higher ratio of liquid to starch, which is why this method works beautifully here, much like our classic Ritz Cracker Chicken Casserole which relies on a similar rich base to keep everything moist.

Trust me on this one, you do not need canned soup to get that nostalgic flavor.

By using real heavy cream and chicken broth, we create a sauce that clings to the noodles without feeling heavy, similar to how we build the velvety sauce in our Creamy Chicken Tetrazzini.

Ingredients

  • 340 g wide egg noodles (about 12 oz)
  • 450 g cooked chicken breast, shredded (about 3 cups)
  • 4 tbsp unsalted butter
  • 1 medium yellow onion, finely diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tbsp Diamond Crystal kosher salt (or 1.5 tsp fine sea salt)
  • 1/2 tsp freshly cracked black pepper
  • 1 cup frozen peas, thawed
  • 1.5 cups sharp cheddar cheese, freshly grated and divided
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil

Directions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with butter or non-stick spray.
  2. Bring a large pot of salted water to a rolling boil. Cook the egg noodles for exactly 3 minutes less than the package directions (they should still have a firm bite), then drain and set aside.
  3. Melt the butter in a large skillet over medium heat. Add the onion, carrots, and celery, cooking until the vegetables are softened, about 6 to 8 minutes. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle the flour over the vegetables and stir constantly for 2 minutes to cook out the raw flour taste. Slowly whisk in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the pan.
  5. Bring the sauce to a gentle simmer and let it thicken for 3 to 4 minutes. Stir in the Diamond Crystal kosher salt, black pepper, thawed peas, and 1 cup of the grated cheddar cheese until melted and smooth.
  6. Remove the skillet from the heat. Gently fold in the shredded chicken and cooked egg noodles until everything is evenly coated in the creamy sauce.
  7. Transfer the mixture to your prepared baking dish. In a small bowl, toss the panko breadcrumbs with olive oil and the remaining 1/2 cup of cheddar cheese, then scatter this mixture evenly over the top of the casserole.
  8. Bake for 20 to 25 minutes, or until the sauce is bubbling at the edges and the breadcrumb topping is beautifully golden brown. Let stand for 5 minutes before serving.

Notes

  • Salt Conversion: We use 1 tablespoon of Diamond Crystal kosher salt. If you are using fine sea salt or Morton's kosher salt, reduce this measurement to 1.5 teaspoons to avoid over-salting.
  • The Dairy Science: Heavy cream is essential here because its high fat content prevents the sauce from curdling or splitting under the high heat of the oven, unlike whole milk or half-and-half.
  • Workflow Warning: Keep a close eye on the garlic when sautĂ©ing. If it burns, it turns bitter and will ruin the delicate flavor of your cream sauce.
  • Storage Behavior: The noodles will continue to absorb liquid as the casserole sits in the fridge, meaning leftovers will naturally be much thicker the next day.

Serving Suggestions

This casserole is incredibly rich and comforting, so it pairs beautifully with bright, fresh sides that help balance the heavy cream and cheese.

  • A crisp green salad tossed with a light lemon vinaigrette to cut through the richness.
  • Roasted green beans or broccoli to add a vibrant, charred contrast to the plate.
  • Warm, crusty sourdough bread to swipe up every last drop of the cream sauce.
  • A side of quick Pickled Red Onions to provide a bright, acidic pop.

Storage and Reheating

Casseroles are notorious for changing personality overnight. Once tucked away, the noodles will greedily drink up the remaining moisture.

Store any leftovers in an airtight container for up to three days. When you look at it tomorrow, it will seem dry and solid, but do not panic because this is completely normal.

To reheat, scoop a portion into a microwave-safe bowl and splash in a tablespoon of chicken broth or milk. Cover it with a damp paper towel to trap the steam, then heat in 30-second bursts, stirring gently between each interval so the sauce re-emulsifies instead of splitting into an oily puddle.

Never freeze this dish.

The dairy-heavy sauce will break upon thawing, leaving you with a watery, grainy texture that no amount of stirring can save.

Ingredient Substitutes

If you need to swap things out based on what is currently hiding in your pantry, here are the easiest adjustments:

  1. The Chicken: You can easily swap the shredded chicken breast for leftover rotisserie chicken, turkey, or even canned tuna.
  2. The Noodles: If you don't have egg noodles, penne or rotini work well, but make sure to cook them to a very firm al dente.
  3. The Veggies: Feel free to use frozen peas and carrots, or swap them for sautéed mushrooms or broccoli florets. If you want to skip the noodles entirely for a veggie-forward option, check out our Creamy Low Carb Chicken Casserole.
  4. The Cheese: Gruyère, Swiss, or Monterey Jack can replace the cheddar for a different flavor profile.

At the end of the day, this is the kind of food that feels like a warm hug when the world is a bit too loud. Tap your spatula against the side of the pan, scoop out a generous portion, and let yourself enjoy a quiet, comforting meal with the people you love.
