A rich, dairy-free creamy garlic chicken skillet that is fully Paleo, Whole30, and Keto-friendly, made in under 30 minutes.

Creamy Garlic Chicken Skillet
Why This Recipe Works:
  • Emulsion science: Coconut cream and chicken stock create a stable, velvety sauce without dairy or starch.
  • Searing technique: Searing the chicken first builds a deep fond, unlocking oil-soluble flavor compounds.
  • One-pan ease: Everything cooks in a single skillet, preserving all the savory juices and making cleanup a breeze.

I still remember the humid Tuesday evening I tried to impress my future in-laws with a classic French cream sauce, only to watch the heavy cream split into a greasy, curdled swamp. I stood there in my tiny kitchen, frantically whisking until my forearms ached, but the damage was done.

It was a humiliating lesson in the fragile physics of dairy emulsions.

I served it anyway.

Years later, when I transitioned to a dairy-free lifestyle, I assumed luxurious, velvety pan sauces were forever off the table because every canned coconut milk brand I tried either tasted like a tropical sunscreen lotion or refused to thicken without a mountain of cornstarch. This brand comparison failed every single test because the stabilizers they use completely ruin the mouthfeel.

But then I discovered the magic of combining high-fat coconut cream with chicken stock and a heavy hand of garlic. Bear with me here, because the science behind this is beautifully simple: the natural fats emulsify with the chicken's gelatin, creating a glossy coat that clings to your spoon.

If you aren't strictly Paleo and crave some carbs, you can easily toss this sauce with noodles, similar to our creamy lemon garlic chicken pasta.

It is absolutely perfect.

Ingredients

  • 1.5 lbs chicken breasts, cut into thin cutlets
  • 1.5 tsp Diamond Crystal kosher salt (or 1 tsp fine sea salt)
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 6 cloves garlic, minced
  • 1/2 cup chicken bone broth
  • 1 cup canned coconut cream (unsweetened, stabilizer-free)
  • 1 tsp Whole30-compliant Dijon mustard
  • 2 cups fresh baby spinach
  • 1 tbsp fresh parsley, chopped

Directions

  1. Season the chicken cutlets evenly with Diamond Crystal kosher salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Tap your tongs against your hip to get ready, then carefully lay the chicken in the hot pan.
  3. Sear the chicken for 4-5 minutes per side until golden brown, then transfer to a plate.
  4. Reduce heat to medium. Add minced garlic to the pan juices and sauté for 30 seconds until fragrant, being careful not to let it burn.
  5. Pour in the chicken bone broth, scraping up the browned bits (fond) from the bottom of the pan with a wooden spoon.
  6. Whisk in the coconut cream and Dijon mustard until smooth. Let the liquid simmer for 3-4 minutes until it begins to thicken.
  7. Stir in the baby spinach until wilted, then return the chicken and any accumulated juices to the skillet. Simmer for 2 minutes to warm through.
  8. Garnish with fresh parsley and serve warm.

Notes

  • Salt Conversion: We use Diamond Crystal kosher salt. If you are using fine sea salt or table salt, reduce the amount by half to avoid over-salting your dish.
  • The Science of Coconut Cream: Always choose a canned coconut cream without stabilizers like guar gum. Stabilizers prevent the fat from emulsifying naturally with the chicken broth's protein matrix, which can leave your sauce watery.
  • Garlic Workflow Warning: Do not let the garlic brown too much when sautĂ©ing. Burnt garlic introduces a bitter flavor compound that cannot be masked by the cream, ruining the entire flavor profile of the skillet.
  • Storage Behavior: When stored in the fridge, the coconut cream will solidify into a thick paste. Reheat it slowly in a skillet with a splash of broth to re-emulsify the fats smoothly.

Serving Suggestions

This versatile skillet pairs beautifully with a variety of side dishes that soak up every drop of the luxurious garlic sauce. Here are my favorite ways to plate it:

  • Serve it alongside our crispy garlic butter green beans for a vibrant, low-carb green side.
  • Spoon the rich sauce over a bed of cauliflower rice to keep the meal fully Paleo and Keto-friendly.
  • Pair it with a side of roasted Brussels sprouts to add a lovely caramelized crunch to the plate.
  • If you aren't counting carbs, serve it next to a cozy creamy meat and potato skillet for the ultimate comfort food feast.

Storage and Reheating

Store any leftovers in an airtight glass container in the fridge for up to four days. You will notice the sauce solidifies into a thick, gelatinous state once chilled, which is completely normal due to the high fat content of the coconut cream and the natural gelatin from the broth.

Do not panic when it looks like a solid block of cold gravy.

To reheat, place the chicken and sauce back into a skillet over low heat. Splash in a tablespoon of water or chicken broth, and whisk gently as it warms to help the emulsion come back together beautifully without splitting.

Avoid the microwave if you can.

High microwave heat will cause the coconut fats to separate, leaving you with a greasy puddle instead of a velvety sauce.

Ingredient Substitutes

If you need to swap out any ingredients, here are the easiest, kitchen-tested alternatives:

  1. Coconut Cream: If you aren't dairy-free, heavy whipping cream works beautifully as a direct swap.
  2. Baby Spinach: Baby kale or Swiss chard can be used, though they require an extra minute of simmering to tenderize.
  3. Chicken Breasts: Boneless, skinless chicken thighs are an excellent alternative and stay incredibly juicy.

Let me know if this creamy skillet saves your Tuesday night dinner just like it did mine. Happy cooking, friends!
