These velvety Greek honey pistachio cheesecake bars feature a crisp, nutty graham cracker crust, a rich cream cheese filling swirled with wild orange blossom honey, and a crunchy toasted pistachio topping.

Greek Honey Pistachio Cheesecake Bars
Why This Recipe Works:
  • Greek yogurt introduces lactic acid to naturally tenderize the cream cheese protein matrix for an ultra-creamy mouthfeel.
  • Baking in a bar format reduces thermal mass, eliminating the need for a water bath while preventing cracks.
  • Toasting the pistachios releases oil-soluble flavor compounds that infuse the entire graham crust with deep, nutty warmth.

Three summers ago, I stood in my sweltering third-floor apartment kitchen, staring at a cheesecake that had cracked so violently down the center it looked like a miniature tectonic fault line.

I actually cried.

My mistake was treating the delicate batter like a cake mix, whipping it with a hand mixer until my forearms ached and trapping massive amounts of air that inevitably expanded in the oven before collapsing into a sad, chalky crater. Traditional cheesecakes suffer from syneresis when overbaked, meaning the protein matrix tightens up and squeezes out moisture like a wrung-out sponge.

This brand of cream cheese failed every test because it had too many added stabilizers.

Bear with me here, because the physics of this is fascinating. By baking these as bars in a shallow pan, we reduce the thermal mass, meaning they cook evenly in half the time without needing a fussy water bath.

Trust me on this one.

Strained Greek yogurt is the secret. Its lactic acid weakens egg proteins, ensuring a velvety texture that clings to your fork.

If you love creamy, tangy desserts but want something a bit different, you might also enjoy my no-bake pistachio cheesecake or even a batch of chocolate chip cheesecake cookies for a portable treat.

Ingredients

  • 1.5 cups graham cracker crumbs (about 12 full sheets)
  • 1/4 cup finely ground raw pistachios
  • 1/3 cup unsalted butter, melted
  • 2 tbsp wild honey
  • 1/4 tsp Diamond Crystal kosher salt
  • 16 oz cream cheese, softened to room temperature
  • 1/2 cup Greek yogurt (5% milk fat, strained)
  • 1/2 cup orange blossom honey
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp Diamond Crystal kosher salt (for the filling)
  • 1/2 cup roasted pistachios, roughly chopped
  • 3 tbsp honey, warmed for drizzling

Directions

  1. Preheat your oven to 325°F (163°C) and line an 8x8 inch baking pan with parchment paper, leaving a slight overhang on the sides for easy removal.
  2. In a medium bowl, stir together the graham cracker crumbs, ground raw pistachios, melted butter, 2 tablespoons of honey, and 1/4 teaspoon of salt until the mixture resembles wet sand.
  3. Press the crumb mixture firmly into the bottom of the prepared pan, using the flat bottom of a metal measuring cup to pack it tightly until your thumb goes numb.
  4. Bake the crust for 10 minutes until it is lightly golden and fragrant, then set it aside on a wire rack to cool slightly while you prepare the filling.
  5. In a large mixing bowl, beat the softened cream cheese and Greek yogurt together on medium speed until completely smooth and free of lumps.
  6. Add the orange blossom honey, vanilla extract, and 1/2 teaspoon of kosher salt, mixing on low speed just until fully incorporated.
  7. Add the eggs one at a time, mixing on low speed after each addition just until the yellow yolk disappears to avoid whipping excess air into the batter.
  8. Pour the cheesecake batter over the cooled crust, smoothing the top with a spatula, and bake for 30 to 35 minutes until the edges are set but the center still has a slight, gelatinous jiggle.
  9. Remove the pan from the oven and let it cool completely to room temperature on a wire rack, then transfer it to the refrigerator to chill for at least 4 hours.
  10. Before slicing, lift the bars out of the pan using the parchment overhang, scatter the chopped roasted pistachios over the top, and drizzle generously with the warmed honey.

Notes

  • We highly recommend using Diamond Crystal kosher salt; if you are using Morton's kosher salt or fine table salt, cut the volume measurement in half (e.g., use 1/8 teaspoon instead of 1/4 teaspoon).
  • Greek yogurt provides lactic acid which gently breaks down the tight protein bonds in the cream cheese, preventing a rubbery texture and ensuring a velvety mouthfeel.
  • Keep a close eye on the crust during its initial bake; honey in the crust caramelizes rapidly and can transition from beautifully toasted to bitter and burnt in under two minutes.
  • After 24 hours in the fridge, the graham cracker crust will naturally soften slightly as it absorbs moisture from the cheesecake layer, but the pistachio oils will continue to mature, deepening the nutty flavor profile.

Serving Suggestions

These elegant bars are best enjoyed chilled, sliced into clean squares using a sharp knife dipped in hot water between cuts. Enhance the experience with these simple pairings:

  • Serve with a dollop of unsweetened whipped cream to balance the rich sweetness of the honey.
  • Pair with a hot cup of dark roast espresso or strong black tea to cut through the creaminess.
  • Garnish with fresh, tart raspberries or blackberries for a beautiful color contrast and a pop of acidity.
  • Drizzle an extra teaspoon of warm, high-quality thyme honey over each individual plate right before serving.

Storage and Reheating

These bars are actually better on day two. The honey and pistachio flavors meld together beautifully in the cold environment of your refrigerator, creating a much deeper, more complex taste profile than when they are freshly baked.

Store them in an airtight container with parchment paper between layers to prevent sticking. They will keep perfectly for up to five days.

Do not freeze them.

Freezing destroys the delicate emulsion of the cream cheese and Greek yogurt, causing the bars to weep water and turn unpleasantly grainy upon thawing. Keep them chilled, and enjoy them straight from the fridge.

Ingredient Substitutes

If you need to adapt this recipe based on what is in your pantry, here are some reliable swaps:

  1. Graham Crackers: Can be substituted with vanilla wafers or digestive biscuits. (If you want a different crust entirely, try the base from our churro cheesecake).
  2. Greek Yogurt: Sour cream can be used in an equal 1:1 ratio if you prefer a sharper, more traditional tang.
  3. Pistachios: Toasted walnuts or almonds work beautifully if you have a pistachio allergy.
  4. Honey: Maple syrup or agave nectar can be used, though you will lose that signature floral Greek honey aroma.

I hope these bars bring a little bit of sweet, nutty joy to your kitchen table. Let me know if you make them, and especially if you manage to resist eating the warm crust straight out of the pan—because I certainly couldn't.
