  • 1.5 cups low-moisture shredded mozzarella cheese

  • 2 tbsp hot honey
  • 1/2 tsp Diamond Crystal kosher salt
  • 1 tbsp olive oil
  • Fresh basil leaves

Directions

  1. Place a 12-inch cast iron skillet on the middle rack of your oven and preheat to 500°F (260°C) for at least 30 minutes to build up thermal mass.
  2. On a lightly floured surface, stretch your pizza dough into a 12-inch circle using your hands, leaving a slightly thicker border for the crust.
  3. Carefully remove the hot skillet from the oven using heavy-duty oven mitts, and brush the bottom with olive oil.
  4. Carefully transfer the stretched dough into the hot skillet, pressing it gently against the sides.
  5. Spread the pizza sauce evenly over the dough, leaving a 1/2-inch border, then sprinkle with the shredded mozzarella and dollop with spoonfuls of ricotta.
  6. Bake at 500°F (260°C) for 12 to 15 minutes, or until the crust is deeply golden and the cheese is bubbly and blistered.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have Morton's kosher salt, reduce the volume by half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an overly salty crust.
  • Low-moisture mozzarella is essential here because fresh mozzarella contains too much water, which vaporizes during baking and creates a soggy pool in the center of your pizza.
  • Keep a close eye on the pizza during the last 3 minutes of baking; the sugars in the dough and sauce can transition from beautifully caramelized to bitter and burnt very quickly at 500°F.
  • Leftover pizza stored in the fridge will lose its crispness as the crust absorbs moisture from the sauce, but you can easily restore its crunch by reheating it in a dry skillet over medium heat.
  • If your dough keeps shrinking back when you try to stretch it, let it rest on the counter for 10 minutes to relax the gluten network before trying again.
