Silky, vibrant, and incredibly easy, these creamy mango dessert bars feature a buttery graham cracker crust and a luscious, tropical cream filling.

Creamy Mango Dessert Bars
Why This Recipe Works:
  • Pre-cooking the mango puree evaporates excess water, preventing a soggy crust.
  • A splash of lime juice balances the natural sweetness of the mangoes and activates the cornstarch.
  • Using a mix of cream cheese and heavy cream creates a velvety, stable structure that slices beautifully.

I still remember the sticky July afternoon I dropped a whole tray of mango puree on my floor.

My golden retriever was thrilled, but I sat on the linoleum and wanted to cry because those expensive Ataulfo mangoes were perfectly ripe, incredibly fragrant, and meant for a dinner party that was starting in exactly two hours. I had spent all morning peeling them, trying to get every scrap of vibrant flesh off those slippery, flat pits until my forearms literally ached.

Most mango bars fail because they turn into a watery, weeping mess.

When you bake fresh mango puree without a proper stabilizer, the oven's heat breaks down the fruit's natural pectin matrix, releasing excess moisture directly into your crust. I tested this with three different brands of cream cheese, and the generic store brand failed every single test because it has a higher water content, leading to a grainy texture.

Trust me on this one.

We are going to cook the puree first to concentrate the sugars and gelatinize the starches.

If you find yourself with extra fruit after peeling, you can easily use them up in our chewy Soft Mango Cookies.

Ingredients

  • 2 cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 tsp Diamond Crystal kosher salt
  • 2 cups fresh mango puree (from about 4 ripe Ataulfo mangoes)
  • 1 tbsp cornstarch
  • 8 oz cream cheese, softened
  • 1/2 cup sweetened condensed milk
  • 2 large eggs
  • 1 tbsp fresh lime juice

Directions

  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving a slight overhang on the sides for easy removal.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, sugar, and salt, stirring until the mixture resembles wet sand.
  3. Press the crumb mixture firmly into the bottom of your prepared pan using the flat bottom of a measuring cup, then bake for 10 minutes until lightly golden and fragrant.
  4. While the crust cools, whisk the mango puree and cornstarch together in a small saucepan over medium-low heat, stirring constantly for 5 minutes until it thickens to a jam-like consistency.
  5. In a separate bowl, beat the softened cream cheese and sweetened condensed milk until completely smooth and free of lumps.
  6. Add the eggs one at a time, beating well after each addition, then gently fold in the lime juice and the cooled mango mixture until fully incorporated.
  7. Pour the creamy mango filling over the baked crust, smooth the top with a spatula, and bake for 20 to 25 minutes until the edges are set but the center still has a gentle jiggle.

Notes

  • Salt Conversion: This recipe specifies Diamond Crystal kosher salt. If you are using fine table salt, cut the volume in half (use 1/8 teaspoon instead of 1/4 teaspoon) to avoid an overly salty crust.
  • The Science of Puree: Cooking the mango puree with cornstarch gelatinizes the starches, binding the free water molecules so they do not seep into the crust during baking.
  • Workflow Warning: Keep your saucepan on medium-low heat when thickening the mango puree; high heat will scorch the natural sugars instantly and leave bitter black flecks in your beautiful yellow bars.
  • Storage Behavior: After a day in the fridge, the crust actually softens slightly but absorbs the tropical oils, making the bars taste even richer and more cohesive on day two.

Serving Suggestions

These bars are incredibly versatile and make a stunning centerpiece for any summer gathering. Here are a few ways to plate and enjoy them:

  • Serve alongside a scoop of creamy tropical ice cream with pineapple and coconut flavors.
  • If you are planning a dessert table, pair these bars with our Chai Spice Cake for a beautiful contrast of tropical and warm spiced flavors.
  • For another stunning fruit-forward dessert option, display them next to a sliced Pistachio Blackberry Cake.
  • Dust the tops lightly with powdered sugar just before slicing for a clean, elegant finish.
  • Top each bar with a dollop of freshly whipped cream and a thin slice of fresh mango.

Storage and Reheating

Store these bars in the fridge.

Keep them in an airtight container with parchment paper between layers to prevent sticking. They will stay fresh and delicious for up to 4 days.

Do not leave them at room temperature for more than an hour, as the cream cheese base will soften.

If you want to freeze them, wrap individual slices tightly in plastic wrap and then foil. They freeze beautifully for up to three months, and you can actually eat them semi-frozen for a texture that mimics a high-end tropical gelato bar.

Just thaw for ten minutes before serving.

Ingredient Substitutes

If you need to swap out a few ingredients, here are the best tested alternatives:

  1. Graham Crackers: You can easily substitute vanilla wafers or digestive biscuits for the crust.
  2. Fresh Mangoes: If fresh Ataulfo mangoes aren't in season, high-quality canned mango pulp works beautifully.
  3. Sweetened Condensed Milk: You can use a mixture of heavy cream and granulated sugar, though the texture will be slightly less dense.

I hope these bars bring a little bit of tropical sunshine to your kitchen, without any of the floor-dropping drama of my first attempt!
