- 2 lbs (900g) Yukon Gold potatoes, peeled and cut into 3/4-inch cubes
- 1 tablespoon apple cider vinegar

- 1 tablespoon Dijon mustard
- 1/2 cup finely diced celery
- 1/4 cup finely diced red onion
- 2 hard-boiled eggs, chopped
- 2 tablespoons chopped fresh dill
- 1/4 teaspoon freshly cracked black pepper
Directions
- Place the cubed potatoes in a large pot and cover with cold water by at least an inch. Add 1 teaspoon of Diamond Crystal kosher salt. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are easily pierced with a paring knife, about 10 to 12 minutes.
