Ingredients
- 3 medium beets, peeled and diced into 1/2-inch cubes
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 2 tbsp olive oil, divided
- 1 tsp Diamond Crystal kosher salt, divided
- 1/2 tsp freshly cracked black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup pumpkin seeds (pepitas), toasted
- 1/4 cup Greek yogurt
- 1 tbsp fresh lemon juice
- 1 tbsp honey
Directions
- Preheat your oven to 400°F (204°C).
- Toss the diced beets with one tablespoon of olive oil, half of the Diamond Crystal kosher salt, and black pepper on one side of a large baking sheet.
- Toss the diced sweet potatoes with the remaining olive oil, salt, and pepper on the other side of the sheet pan, ensuring they do not crowd each other.
- Roast for 30 to 35 minutes, flipping halfway through, until both vegetables are tender and caramelized at the edges.
- While the vegetables roast, whisk the Greek yogurt, lemon juice, and honey in a small bowl until smooth and creamy.
- Transfer the warm roasted vegetables to a serving platter, drizzle with the creamy dressing, and top with crumbled feta and toasted pumpkin seeds.
Notes
- Always use Diamond Crystal kosher salt; if you are using Morton's or fine table salt, cut the volume by half (use 1/2 teaspoon instead of 1 teaspoon) to avoid over-salting.
- Beets contain geosmin, an organic compound that gives them their signature earthy taste. Tossing them with an acid like lemon juice or vinegar breaks down this compound, making them taste sweeter and brighter.
