Ingredients

  • 9 lasagna noodles (oven-ready or boiled al dente)
  • 1.5 lbs medium shrimp, peeled, deveined, and chopped into bite-sized pieces
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2.5 cups whole milk, warmed
  • 1 cup heavy cream
  • 1/4 tsp freshly grated nutmeg
  • 1.5 tsp Diamond Crystal kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 cups low-moisture mozzarella cheese, shredded and divided
  • 1 cup Parmigiano-Reggiano, freshly grated and divided
  • 1/2 cup ricotta cheese
  • 2 tbsp fresh flat-leaf parsley, finely chopped
  • 1 tbsp fresh dill, finely chopped

Directions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with butter or cooking spray.
  2. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chopped shrimp and cook for just 1 to 2 minutes until they turn pink but are still slightly translucent in the center; transfer them to a bowl using a slotted spoon, leaving the juices behind.
  3. Melt the remaining 3 tablespoons of butter in the same skillet over medium heat, then whisk in the flour to form a paste (roux) and cook for 1 minute to remove the raw flour taste.
  4. Slowly pour in the warm milk and heavy cream, whisking constantly until your forearm aches to prevent lumps, then bring to a gentle simmer and cook for 3 to 4 minutes until the sauce thickens enough to coat the back of a spoon.
  5. Remove the skillet from the heat and stir in the Diamond Crystal kosher salt, black pepper, nutmeg, lemon juice, lemon zest, ricotta cheese, half of the parmesan, and half of the chopped herbs.
  6. Spread a thin layer of the white sauce on the bottom of the prepared baking dish, then arrange 3 lasagna noodles on top.
  7. Scatter half of the par-cooked shrimp over the noodles, drizzle with a third of the remaining white sauce, and sprinkle with a third of the mozzarella cheese.
  8. Repeat the layers: 3 noodles, the remaining shrimp, another third of the sauce, and another third of the mozzarella.
  9. Place the final 3 noodles on top, spread the remaining white sauce evenly over them, and top with the remaining mozzarella and parmesan cheese.
  10. Cover the dish loosely with foil (ensuring it doesn't touch the cheese) and bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown. Let it rest for 15 minutes before slicing.

Notes

  • I highly recommend using Diamond Crystal kosher salt for this recipe; if you only have standard table salt, cut the measurement in half (use 3/4 teaspoon instead of 1.5 teaspoons) to avoid over-salting the delicate seafood.
  • Whisking ricotta directly into the warm BĂ©chamel sauce stabilizes the emulsion, preventing the cheese from curdling or separating into a grainy texture during the high-heat bake.
  • Do not fully cook the shrimp in the skillet! They will bake for another 35 minutes in the oven, so pulling them out when they are barely pink prevents them from turning into rubbery, dry nuggets.
  • Keep in mind that seafood lasagna absorbs liquid as it sits; after a day in the fridge, the noodles will drink up the sauce, making the leftovers slightly firmer but incredibly flavorful.
  • If you are using oven-ready (no-boil) noodles, make sure they are completely submerged in the sauce during assembly, or the edges will remain crunchy and dry.
