Directions

  1. In a medium saucepan, whisk the egg yolks, shaved palm sugar, cornstarch, and Diamond Crystal kosher salt together until smooth and pale.
  2. Slowly pour in the full-fat coconut cream while whisking constantly to create a stable emulsion before applying heat.
  3. Place the saucepan over medium-low heat and cook, stirring continuously with a silicone spatula, making sure to scrape the bottom and corners of the pan to prevent scorching.
  4. Continue cooking for about 8 to 10 minutes, or until the mixture thickens enough to coat the back of a spoon.
  5. Remove from heat, stir in the vanilla extract, and strain the custard through a fine-mesh sieve into a bowl to ensure an absolutely perfect, silky texture.
  6. Divide the custard into four rustic serving bowls, let cool to room temperature, then chill in the fridge for at least 2 hours.
  7. Just before serving, top generously with toasted coconut flakes.

Notes

  • I highly recommend using Chaokoh or Aroy-D full-fat coconut cream; if using Diamond Crystal kosher salt, use 1/2 teaspoon, but if you only have table salt, scale it down to 1/4 teaspoon.
  • The cornstarch acts as a thermal buffer, preventing the egg yolk proteins from over-coagulating and turning your custard into sweet scrambled eggs.
  • Do not walk away from the stove; the starch gelatinization happens rapidly at the bottom of the pan, and if you don't scrape continuously, it will scorch in seconds.
  • After a year of washing my favorite fine-mesh sieve, the mesh has slightly discolored, but it is still absolutely essential for catching any tiny bits of cooked egg yolk.

Storage and Reheating

This custard is definitely best served cold, straight from the fridge, within three days of making it. Over time, the starch network will slowly degrade, causing the custard to weep tiny droplets of water, a process known as syneresis.

Do not freeze this.

The freezing process completely destroys the delicate fat emulsion. When thawed, it will separate into a grainy, watery mess that even a vigorous whisking cannot save.

If you must make it ahead, keep it tightly covered with plastic wrap pressed directly onto the surface. This simple step prevents a tough skin from forming and keeps the custard tasting fresh.

Ingredient Substitutes

If you need to swap a few things, here are the best tested alternatives:

  1. Palm Sugar: You can substitute light brown sugar in a 1:1 ratio, though you will lose some of that distinct, earthy caramel note.
  2. Coconut Cream: If you cannot find coconut cream, use the solid cream scooped from the top of a chilled can of full-fat coconut milk, but avoid carton coconut milk at all costs.
  3. Cornstarch: Arrowroot powder works beautifully as a 1:1 replacement for starch gelatinization.
