Creamy White Chicken Enchiladas
These creamy white chicken enchiladas feature tender shredded chicken wrapped in soft tortillas, smothered in a rich, velvety green chile sour cream sauce, and baked under a blanket of bubbly Monterey Jack cheese.
- A roux-based foundation prevents the sour cream from curdling under high heat.
- Full-fat Monterey Jack cheese melts into a smooth, gooey blanket without releasing excess oil.
- Briefly warming the tortillas makes them pliable, preventing them from tearing as you roll.
My first kitchen disaster smelled like scorched flour tortillas.
I was nineteen, huddled in a drafty apartment, trying to impress my sister with what I thought was a fancy cream sauce. Instead, the bottom scorched into a bitter black crust while the center remained cold and chalky.
Standard recipes fail because low-fat sour cream curdles instantly under heat. The lack of butterfat causes the proteins to clump into a watery, broken mess.
Think about this in terms of food physics. Flour tortillas are incredibly thirsty, and if your sauce lacks a stable emulsion, those tortillas will suck up all the moisture, leaving behind a gummy, paste-like texture that clings to the roof of your mouth. I tested this with five different fat ratios before realizing we needed a proper roux-based velouté to lock in the moisture. A simple roux changes everything.
By cooking flour and butter first, we coat the starch granules to prevent clumping. Whipping in full-fat sour cream off the heat ensures the emulsion stays perfectly smooth and rich, similar to how we build a creamy cheese sauce from scratch.
You do not need any fancy equipment for this. Just grab a heavy skillet, your favorite baking dish, and let's get rolling. If you want a spicy kick, check out my Jalapeño Popper Cheesy Chicken Enchiladas.

Ingredients
- 3 cups shredded rotisserie chicken
- 2 cups shredded Monterey Jack cheese, divided
- 8 soft flour tortillas (8-inch)
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 2 cups low-sodium chicken broth
- 1 cup full-fat sour cream
- 1 can (4 oz) diced green chiles
- 1 tsp Diamond Crystal kosher salt
- 1/2 tsp garlic powder
- 1/4 tsp ground cumin
Directions
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- In a medium bowl, toss the shredded chicken with 1 cup of the Monterey Jack cheese and a pinch of salt.
- Wrap tortillas in a damp paper towel and microwave for 30 seconds until warm and pliable.
- Melt butter in a skillet over medium heat, whisk in flour, and cook for 1 minute to neutralize the raw flour taste.
- Gradually whisk in chicken broth, bringing to a simmer until thickened, then remove from heat and stir in sour cream, green chiles, salt, garlic powder, and cumin.
- Spoon 1/2 cup of the sauce into the bottom of the baking dish, then roll the chicken mixture into the tortillas and place them seam-side down in the dish.
- Pour the remaining sauce over the enchiladas, top with the remaining Monterey Jack cheese, and bake for 20-25 minutes until bubbling and golden.
Notes
- Salt Conversion: I recommend using Diamond Crystal kosher salt. If you are using fine table salt, cut the measurement in half (use 1/2 tsp instead of 1 tsp) to avoid over-salting the delicate cream sauce.
- The Science of Sour Cream: Full-fat sour cream is non-negotiable. The high fat content stabilizes the protein matrix, preventing the sauce from breaking or curdling when exposed to the oven's high thermal mass.
- Roux Workflow Warning: Do not let your roux burn! Keep your whisk moving constantly when adding the chicken broth to prevent lumps from forming in your velouté.
- Storage Behavior: After a day in the fridge, the flour tortillas will naturally absorb more sauce. The dish will taste even more flavorful, but you may want to splash a tablespoon of chicken broth over leftovers before reheating to restore the sauciness.
- Cheese Selection: Grate your own Monterey Jack cheese from a block. Pre-shredded cheese failed my melting tests because of the powdery cellulose coating, which prevents a smooth melt and leaves a gritty texture.
Serving Suggestions
Complete your dinner spread with fresh, vibrant sides that cut through the rich, velvety cream sauce and add a delightful crunch to your meal.
- A side of crispy Mexican Tostadas for a crunchy contrast.
- Fresh cilantro lime rice to soak up any extra green chile sauce.
- A bright, citrusy avocado salad to balance the heavy cheese.
- Pickled red onions for a sharp, tangy bite that cuts through the richness.
Storage and Reheating
Store any leftover enchiladas in an airtight container in the refrigerator for up to three days. The tortillas will continue to soften as they sit, absorbing the savory green chile cream sauce like a sponge.
To reheat, I highly recommend using the oven rather than the microwave. Microwaving can cause the sour cream sauce to separate, leaving a greasy puddle on your plate.
Cover the dish with foil and bake at 350°F for fifteen minutes.
If you are in a rush, the microwave will work, but do it at 50% power in short bursts. This gentle heating prevents the protein matrix in the cheese from seizing up and turning rubbery.
Ingredient Substitutes
If you need to swap things out based on what is in your pantry, here are the easiest conversions:
- Monterey Jack Cheese: Swap with Pepper Jack for an extra kick of heat, or mild white cheddar.
- Sour Cream: Greek yogurt can work in a pinch, but use full-fat to prevent curdling.
- Rotisserie Chicken: Leftover shredded turkey or even seasoned ground beef works beautifully.
- Green Chiles: Use chopped fresh jalapeños if you prefer a sharper, fresher pepper flavor.
These enchiladas have become my absolute go-to for cozy Sunday dinners, and I promise they will turn even the most chaotic weeknight into something special. Let me know how yours turn out!
