Air Fryer Churro Bites
Crispy, golden, and ridiculously easy, these air fryer churro bites deliver that deep-fried crunch without the messy oil splatters.
- Cold butter pockets create steam, ensuring a light and tender crumb instead of a dense, bready bite.
- A generous post-cook brush of melted butter helps the cinnamon sugar cling to every single crevice.
- High-heat air circulation mimics deep-frying by crisping the outer starch layer in under eight minutes.
I still remember the exact Tuesday afternoon my cheap plastic piping bag burst, spraying sticky choux pastry all over my kitchen cabinets. It was a spectacular, buttery disaster that left me scrubbing dried dough out of my hair for days.
Since then, I have avoided piping bags like the plague.
Traditional churros rely on deep-frying to rapidly expand the moisture inside the dough, creating steam that puffs them up while the hot oil crisps the exterior.
In an air fryer, the dough dries out. It turns into sad, dense little rocks before the outside can even think about turning golden brown.
The secret to bypassing the piping bag and the dry texture is using a modified biscuit-style dough that relies on chemical leavening and a heavy brush of melted butter. By cutting cold butter into the flour, we create tiny pockets of fat that melt during cooking. This leaves behind a flaky, tender interior that mimics the classic fried texture beautifully without any actual frying.
Trust me on this one, it is hands down the easiest way to satisfy a late-night sweet tooth.

Ingredients
- 1 cup (125g) all-purpose flour
- 1.5 tsp baking powder
- 1/4 tsp Diamond Crystal kosher salt
- 1 tbsp granulated sugar (for the dough)
- 4 tbsp (56g) unsalted butter, cold and cubed
- 1/3 cup (80ml) whole milk
- 1 tsp vanilla extract
- 4 tbsp unsalted butter, melted (for coating)
- 1/3 cup granulated sugar (for coating)
- 1 tbsp ground cinnamon
Directions
- In a medium bowl, whisk together the flour, baking powder, salt, and 1 tablespoon of sugar.
- Use your fingers to rub the cold, cubed butter into the dry ingredients until the mixture resembles coarse sand with a few pea-sized butter pieces remaining.
- Pour in the milk and vanilla extract, stirring gently with a fork just until a soft dough forms. Do not overmix, or your churros will turn out tough.
- Turn the dough onto a lightly floured surface and gently pat it into a 1/2-inch thick square. Cut the dough into 1-inch bite-sized squares.
- Preheat your air fryer to 375°F (190°C). Lightly grease the air fryer basket with cooking spray.
- Place the dough bites in a single layer in the basket, leaving space between each. Cook for 7 to 8 minutes until they are puffed and golden brown.
- While they cook, mix the remaining sugar and cinnamon in a shallow bowl.
- Immediately upon removing the hot bites from the air fryer, brush them generously with melted butter, then toss them in the cinnamon sugar mixture until fully coated.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you are using fine table salt, cut the measurement in half to avoid an overly salty dough.
- Keeping the butter cold is crucial for proper starch gelatinization and steam creation; if the butter melts before baking, the bites will lose their flaky texture.
- Do not crowd the air fryer basket, as crowding lowers the thermal mass and prevents the hot air from crisping the edges properly.
- After a day in the fridge, the cinnamon sugar coating will liquefy slightly and lose its crunch, so these are absolutely best enjoyed fresh.
- If you prefer a traditional oven method, you can try our Baked Churro Bites which use a slightly different baking profile.
Serving Suggestions
These warm, sugary bites are incredible on their own, but pairing them with the right dips takes them to a whole new level.
- Drizzle with warm, rich Chocolate Ganache for the ultimate dipping experience.
- Serve alongside a scoop of vanilla bean ice cream to balance the warm cinnamon spice.
- Pair them with a hot cup of coffee or a spiced Mexican hot chocolate.
- If you love this flavor profile, try serving them alongside our decadent Churro Cheesecake at your next party.
- Arrange them on a dessert platter with fresh strawberries and dulce de leche.
Storage and Reheating
Churros of any kind are notorious for having a short shelf life. These air-fried bites are no exception to that rule.
The sugar quickly turns into a sticky glaze.
If you do have leftovers, store them in an airtight container at room temperature for up to two days. To revive that signature crunch, pop them back into a preheated 350°F air fryer for two to three minutes.
Avoid the microwave at all costs. It will turn your beautiful, flaky bites into rubbery, sad lumps of dough.
Ingredient Substitutes
If you need to adapt this recipe for dietary needs, here are the swaps that actually work without ruining the texture.
- Gluten-Free Flour: Swap the all-purpose flour 1:1 with a high-quality gluten-free baking blend containing xanthan gum.
- Dairy-Free: Use cold coconut oil (solidified) instead of butter, and swap the whole milk for oat milk.
- Sugar Alternative: Use a granulated monk fruit sweetener for the coating, though it won't caramelize quite the same way.
- Quick Dough Alternative: If you are in an absolute rush and want something even simpler, check out our Easy Donut Holes which use a similar quick-dough method.
At the end of the day, baking should be fun, not a stressful exercise in piping dough under pressure. Let me know how your batch turns out, and don't forget to lick the extra cinnamon sugar off your fingers!
