A masterclass in building the ultimate crispy bacon sandwich with perfectly toasted sourdough, thick-cut bacon, and a swipe of seasoned garlic mayo.

Crispy bacon layered in a sandwich with toasted bread
Why This Recipe Works:
  • Oven-baking on a wire rack ensures even heat distribution, preventing the bacon from curling and warping.
  • Pan-toasting the bread in a smear of mayonnaise (instead of butter) creates an incredibly even, golden-brown crust thanks to the Maillard reaction.
  • A touch of acid in the garlic mayo cuts through the rich, salty fat of the bacon, keeping every bite balanced.

I still remember the exact Tuesday morning in my drafty third-floor apartment when I tried to make a bacon sandwich using a flimsy plastic spatula and a warped aluminum pan. The bacon curled into sad, rubbery grease-wheels, and the bread tore to shreds under a cold block of butter.

It was a total disaster.

Think about this in terms of physics. When bacon hits a hot pan, the muscle fibers shrink rapidly while the fat renders at a slower rate, causing the strip to buckle and warp.

I tested this with six different pans, and the cheap non-stick skillet failed every single test because it couldn't hold enough thermal mass to cook the fat evenly. You end up with pockets of raw, flabby white fat right next to burnt, bitter meat.

Trust me on this one: bake your bacon on a wire rack. The hot air renders the fat perfectly.

It is hands down a game-changer.

Once your bacon is flat and crispy, we layer it onto golden, pan-toasted bread swiped with a quick garlic mayo that clings to every nook and cranny.

Ingredients

  • 8 slices thick-cut bacon
  • 4 slices sourdough bread
  • 2 tbsp mayonnaise (for toasting the bread)
  • 1/4 cup mayonnaise (for the spread)
  • 1 clove garlic, finely grated
  • 1 tsp fresh lemon juice
  • 1/2 tsp Diamond Crystal kosher salt
  • Fresh cracked black pepper to taste

Directions

  1. Preheat your oven to 400°F (204°C). Line a large rimmed baking sheet with aluminum foil for easy cleanup, then place a wire cooling rack inside the sheet.
  2. Lay the thick-cut bacon slices in a single layer on the wire rack, ensuring they do not overlap.
  3. Bake for 18 to 22 minutes, or until the bacon is deep golden brown and shatteringly crisp. Transfer the strips to a paper-towel-lined plate using tongs.
  4. While the bacon bakes, whisk together the 1/4 cup mayonnaise, grated garlic, lemon juice, Diamond Crystal kosher salt, and black pepper in a small bowl. Set aside.
  5. Heat a large cast-iron skillet over medium-low heat. Lightly spread the outer sides of the sourdough slices with the remaining 2 tablespoons of mayonnaise.
  6. Place the bread, mayo-side down, in the hot skillet. Toast for 3 to 4 minutes until deeply golden and crispy, then flip and toast the other side for 1 minute.
  7. Assemble the sandwich by spreading the garlic mayo on the inside of the toasted bread, then stacking 4 slices of crispy bacon on top. Close the sandwich, slice diagonally, and serve immediately.

Notes

  • I highly recommend using Diamond Crystal kosher salt for the garlic mayo; if you only have Morton's kosher salt or fine table salt, cut the volume in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an overly salty spread.
  • Toasting the bread with a thin layer of mayonnaise instead of butter works because mayonnaise is an emulsion of oil and egg yolks. The egg proteins accelerate the Maillard reaction, yielding a more uniform, golden-brown crust that doesn't burn as easily as butter solids.
  • Keep a close eye on the bacon during the last 5 minutes of baking. Thick-cut bacon can go from perfectly rendered to bitterly burnt in a matter of sixty seconds, so set a timer and don't walk away.
  • Leftover cooked bacon will lose its shatter-crisp texture in the fridge, but you can easily revive it. Avoid the microwave, which turns it rubbery; instead, reheat the strips in a dry skillet over medium heat for 2 minutes until the fat renders again.
  • If you prefer poultry, you can swap the pork for turkey bacon, though you may want to check out our guide on Club Sandwich with Turkey Bacon for specific tips on rendering leaner meats.

Serving Suggestions

This sandwich is a masterpiece on its own, but you can easily turn it into a full diner-style spread with the right sides.

  • Serve alongside a warm bowl of soup, like our Creamy Cauliflower Soup, for the ultimate comfort meal.
  • Add a side of crispy, salty fries to balance the rich, smoky flavors of the bacon.
  • Pair it with a light, refreshing salad to cut through the richness of the garlic mayo.
  • Layer in some sliced avocado and a grated egg for a twist inspired by our Grated Egg Avocado Toast.
  • Serve with a cold, crisp pickle spear to cleanse the palate between bites.
  • Add fresh heirloom tomatoes and butter lettuce to transform this into the Best BLT Sandwich.

Storage and Reheating

A bacon sandwich is undeniably best enjoyed the absolute second it is assembled. The contrast between the warm, crunchy bread and the shatteringly crisp bacon is a fleeting culinary window.

But life happens.

If you have leftovers, disassemble the sandwich before storing. Keep the toasted bread in an airtight container at room temperature and the bacon in the fridge.

When you are ready to eat, reheat the bacon in a dry cast-iron skillet over medium-low heat until it sizzles and crisps up again. Pop the bread into a toaster oven for just a minute to restore its crunch, then reassemble with a fresh swipe of garlic mayo.

Ingredient Substitutes

Don't let a missing ingredient stand between you and sandwich perfection. Here are the best swaps:

  1. Sourdough Bread: Swap for thick-cut brioche or rustic Italian bread. If you want a garlic-infused twist, you can even use slices of Homemade Garlic Bread.
  2. Mayonnaise Spread: If you run out of mayo for toasting, softened unsalted butter works, though you'll need to watch the heat closely to prevent burning.
  3. Garlic Mayo: Use a high-quality store-bought aioli, or stir a pinch of garlic powder into plain Greek yogurt for a tangier, lighter alternative.
  4. Thick-Cut Bacon: Standard thin bacon works, but reduce the oven baking time by 5 to 7 minutes to prevent it from burning.

There is something deeply comforting about the simple physics of a perfectly executed bacon sandwich. Once you master the oven-baking method, you will never go back to soggy, curled-up stovetop strips again. Grab your sheet pan, tap those tongs against your hip, and go make yourself a sandwich that actually lives up to your cravings.
