Ingredients

Directions

  1. Pat the salmon cubes completely dry with paper towels to remove surface moisture.

  5. Arrange the salmon cubes in a single layer in the air fryer basket, leaving space between each piece to ensure proper air circulation. Cook for 7 to 9 minutes, shaking the basket halfway through, until golden and crispy.
  6. While the salmon cooks, whisk together the Kewpie mayonnaise, sweet chili sauce, Sriracha, and rice vinegar in a medium bowl until smooth.
  7. Transfer the hot, crispy salmon bites to a clean bowl, drizzle with the bang bang sauce, and toss gently to coat. Garnish with green onions and sesame seeds.

Notes

  • I highly recommend using Diamond Crystal Kosher Salt. If you are using Morton's kosher salt or fine table salt, cut the measurement in half (use 1/2 teaspoon instead of 1 teaspoon) to prevent over-salting.
  • Kewpie mayonnaise is essential here because it is made with egg yolks rather than whole eggs, which provides a richer, more stable emulsion that clings to the hot salmon without breaking into an oily mess.
  • Do not overcrowd the air fryer basket. If your basket is small, cook the salmon in two separate batches; crowding will trap steam, causing the cornstarch coating to become soggy instead of crispy.
  • After a day in the fridge, the crispy exterior will naturally soften as it absorbs the sauce. To revive them, reheat in the air fryer at 350°F for 3 to 4 minutes rather than using the microwave.
  • If you prefer a milder heat, start with half the Sriracha and adjust upward to taste.
