Ingredients

  • Vegetable oil, for shallow frying
  • 8 slices thick-cut bacon, cooked until crispy
  • 2 cups shredded romaine lettuce
  • 1 cup diced ripe tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup creamy ranch dressing

Directions

  1. In a shallow bowl, whisk together the flour, cornstarch, Diamond Crystal kosher salt, garlic powder, and smoked paprika.
  2. Dip each chicken tender into the beaten eggs, then dredge thoroughly in the flour mixture, pressing firmly so the coating clings to the meat.
  3. Heat about 1/2 inch of vegetable oil in a heavy skillet over medium-high heat until it reaches 350°F.
  4. Fry the chicken tenders for 3 to 4 minutes per side until golden brown and cooked through, then transfer them to a wire rack to cool slightly.
  5. Warm the flour tortillas in a dry skillet for 15 seconds per side to make them pliable and easy to fold.
  6. Assemble the wraps by laying down a bed of romaine lettuce, followed by two slices of crispy bacon, the sliced crispy chicken, diced tomatoes, and cheddar cheese.
  7. Drizzle generously with ranch dressing, then fold in the sides of the tortilla and roll up tightly.
  8. Toast the assembled wraps in a dry skillet over medium heat for 1 minute per side until the seam is sealed and the tortilla is golden.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have Morton's or fine table salt, cut the measurement in half to avoid an over-salted dredge.
  • Adding cornstarch to the flour dredge weakens the gluten development, which prevents the chicken crust from turning chewy or leathery as it cools.
  • Do not skip warming the tortillas before rolling; cold tortillas lack elasticity and will tear instantly, spilling your ranch all over the cutting board.
  • If you plan to pack these for lunch the next day, store the fried chicken, bacon, and wet ingredients in separate containers and assemble right before eating to prevent sogginess.

Storage and Reheating

Let's be completely honest: a fully assembled wrap does not love sitting in the fridge.

After about twelve hours, the moisture from the tomatoes and ranch will inevitably migrate into the tortilla, turning it soft.

If you must store leftovers, wrap them tightly in parchment paper and then aluminum foil to compress the ingredients and slow down the sogginess.

Never use the microwave.

It will turn your chicken into rubber and your lettuce into hot slime.

Instead, place the wrap in a dry skillet over medium-low heat, covering it with a lid for three minutes per side to melt the cheese while recrisping the exterior.

An air fryer also works beautifully here.

Pop the wrap in at 350°F for about four to five minutes, and it will come out shockingly crisp, almost as good as the day you made it.
