Crispy Cilantro Lime Chicken Sandwich
A perfectly crispy cilantro lime chicken sandwich featuring a zesty, crunchy crust, a vibrant citrus marinade, and a creamy, tangy slaw.
- Acidity as a Tenderizer: Fresh lime juice breaks down tough muscle fibers, ensuring the chicken breast stays incredibly juicy.
- Cornstarch Science: A 50/50 blend of cornstarch and flour prevents gluten development, yielding a shatteringly crisp crust.
- Oil-Soluble Flavors: Marinating with cilantro and spices allows the oil-soluble flavor compounds to penetrate deep into the meat.
I still remember the humid Tuesday afternoon I tried to fry chicken in my tiny apartment, only to have the soggy breading slide completely off the meat and pool in the bottom of my cast-iron skillet like a sad, greasy puddle.
It was incredibly frustrating.
Most chicken sandwiches suffer from this exact structural failure. The moisture from the marinade prevents the flour from clinging to the protein matrix.
The simple fix is a two-step dredging process using cornstarch to absorb excess moisture, combined with buttermilk to create craggy, ultra-crispy bits. Bear with me here, because the physics of this is fascinating: cornstarch doesn't form gluten, meaning it fries up significantly lighter and crunchier than standard flour. I tested this with six different ratios, and a 50/50 split hands down produces the most shatteringly crisp crust.
You probably already have these ingredients in your pantry.

Ingredients
- 4 boneless, skinless chicken breasts (pounded to even thickness)
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 2 tbsp olive oil
- 1 tbsp Diamond Crystal kosher salt
- 1 tsp black pepper
- 1 cup all-purpose flour
- 1 cup cornstarch
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp smoked paprika
- 1 cup buttermilk
- Neutral oil (like peanut or canola) for frying
- 4 brioche buns, toasted
- 1 cup shredded cabbage
- 1/4 cup mayonnaise
Directions
- In a medium bowl, whisk together the lime juice, chopped cilantro, olive oil, Diamond Crystal kosher salt, and black pepper. Add the chicken breasts, turning to coat, and let marinate for at least 30 minutes.
- In a shallow dish, combine the all-purpose flour, cornstarch, garlic powder, onion powder, and smoked paprika. Whisk well to distribute the spices evenly.
- Pour the buttermilk into a second shallow dish. Dredge each marinated chicken breast first in the flour mixture, then dip into the buttermilk, and finally press firmly back into the flour mixture to create heavy, craggy clumps.
- Heat 2 inches of neutral oil in a heavy cast-iron skillet to 350°F (175°C). Carefully lower the chicken into the hot oil using tongs.
- Fry the chicken for 5 to 7 minutes per side, adjusting the heat to maintain the oil temperature, until the crust is deep golden brown and the internal temperature reaches 165°F (74°C). Fish the chicken out and let it drain on a wire rack.
- Assemble the sandwiches by spreading mayonnaise on the toasted brioche buns, topping with the crispy chicken, and piling on the shredded cabbage.
Notes
- Always use Diamond Crystal kosher salt; if you are using Morton's or fine table salt, cut the volume by half to avoid an overly salty brine.
- The high starch content in cornstarch absorbs moisture much more efficiently than wheat flour, preventing steam from turning your crust soggy.
- Do not let the dredged chicken sit on the counter for too long before frying, or the dry flour will absorb the moisture and turn into a paste, ruining the craggy texture.
- Leftover fried chicken will lose its crunch in the fridge, but you can easily revive it by heating it in an air fryer at 375°F (190°C) for 4 to 5 minutes.
Serving Suggestions
Complete your meal by pairing this crunchy sandwich with some of our favorite vibrant sides and refreshing drinks.
- Pair this sandwich with a side of Elote Pasta Salad for a complete, summer-inspired meal.
- Serve alongside a refreshing Spicy Jalapeño Coleslaw to double down on the crunch and heat.
- Wash it down with a cold glass of Watermelon Lemonade to balance the savory richness.
- Add a few slices of pickled jalapeños or a drizzle of hot honey directly onto the chicken before closing the bun.
Storage and Reheating
Store the chicken separately from the buns and slaw.
Placing everything together in one container causes soggy disaster. Keep the chicken in an airtight container lined with a paper towel.
When you are ready to eat, avoid the microwave at all costs because it turns the crust into rubber. Instead, pop the chicken into a 375°F oven or air fryer for five minutes until the oil sizzles.
Toast fresh buns right before serving.
The cabbage slaw keeps for two days. After that, it loses its crunch, so make a fresh batch if needed.
Ingredient Substitutes
If you need to make some adjustments based on what is in your kitchen, try these easy swaps:
- Buttermilk: If you don't have buttermilk, mix 1 cup of whole milk with 1 tablespoon of lemon juice or white vinegar and let it sit for 5 minutes.
- Lime Juice: You can substitute with lemon juice or use our Tangy Lemon Marinade for a different citrus profile.
- Brioche Buns: Potato buns or classic hamburger buns work beautifully if brioche isn't available.
- Cilantro: If you are one of those people for whom cilantro tastes like soap, swap it out for fresh flat-leaf parsley or dill.
It took me years of greasy kitchens and ruined dinners to realize that great fried chicken isn't a secret club—it's just simple kitchen physics wrapped in a little patience. I hope this crispy, lime-kissed sandwich brings as much joy to your table as it does to mine, messy fingers and all.
