Ingredients
- 1 block (8 oz / 225g) high-quality Greek feta cheese (preferably sheep's milk)
- 1/2 cup cornstarch
- 1 large egg
- 2 tablespoons ice-cold water
- 3 tablespoons neutral high-smoke-point oil (like avocado or canola oil)
- 3 tablespoons honey
- 1/2 teaspoon red pepper flakes
- 1 tablespoon toasted sesame seeds
- 1/2 teaspoon Diamond Crystal kosher salt
Directions
- Slice the feta block into four thick, even slabs. Pat them completely dry with paper towels. Place them on a plate and freeze for 10 minutes.
- Set up your dredging station. In one shallow bowl, whisk the egg and ice-cold water. In a second bowl, add the cornstarch.
- Dip each chilled feta slab into the cornstarch, shaking off the excess. Next, submerge it in the egg wash, and then dredge it in the cornstarch a second time to ensure a complete, seamless seal.
- Heat the oil in a heavy-bottomed skillet over medium-high heat until it shimmers. Carefully slide the feta slabs into the hot oil.

Notes
- I highly recommend using Mt. Vikos traditional Greek feta. If you use Diamond Crystal kosher salt for seasoning any accompanying greens, remember that 1 teaspoon equals about 1/2 teaspoon of Morton's.
- Feta has a high moisture content and a relatively low melting point. The double-dredge in cornstarch creates a starch gelatinization barrier that traps steam, preventing the cheese from leaking out into the hot oil.
- Do not walk away from the stove. Sesame seeds and honey burn in a heartbeat under high heat, so keep your honey warming process brief and drizzle it only after the cheese is plated.
- This dish does not keep well. After a day in the fridge, the crispy cornstarch crust will absorb moisture from the cheese and turn into a gummy, unappealing skin. Eat it immediately!
