Directions

  1. Preheat your oven to 400°F (200°C) and place a heavy baking sheet inside to heat up.
  2. In a medium bowl, whisk together the chickpea flour, Diamond Crystal kosher salt, garlic powder, smoked paprika, and black pepper.
  3. Pour the boiling water and olive oil into the dry ingredients, stirring vigorously with a wooden spoon until a stiff dough forms.
  4. Let the dough cool for 5 minutes until safe to handle, then knead it on a piece of parchment paper until smooth.
  5. Place another sheet of parchment paper on top and roll the dough out until it is paper-thin (about 1/16-inch).
  6. Remove the top parchment sheet, cut the dough into triangles using a pizza cutter, and carefully slide the parchment onto the preheated baking sheet.
  7. Bake for 12 to 15 minutes until the edges are golden brown and crisp, then let cool completely on a wire rack.

  • Brand Recommendation: I highly recommend using Bob's Red Mill chickpea flour. If using Diamond Crystal kosher salt, use 1 1/2 teaspoons; if using Morton's or fine table salt, cut that amount in half to 3/4 teaspoon to avoid over-salting.
