Jalapeno Cheese Twists
Flaky, buttery puff pastry twists loaded with sharp cheddar, spicy jalapenos, and a hint of garlic. The ultimate easy, crowd-pleasing appetizer that comes together in minutes.
- Freezing the pastry before baking solidifies the butter, ensuring maximum steam release and ultra-flaky layers.
- Freshly grated cheddar melts smoothly without the gritty, dry texture caused by anti-caking agents in pre-shredded cheese.
- Finely minced jalapenos distribute evenly, ensuring a perfect balance of heat in every single bite.
I still remember the humid Friday evening I tried to make these for my sister's housewarming party, only to have the cheese melt entirely out of the pastry, leaving a sad, charred puddle on my favorite baking sheet.
It was tragic.
The culprit was cheap, pre-shredded cheddar from a bag, which failed because the added potato starch and cellulose prevented the cheese from melting cohesively into the dough.
Washing a baking sheet after burnt cheese has bonded to it on a molecular level is a chore I wouldn't wish on my worst enemy.
To fix this, you must grate your own cheese from a block. Do it yourself. This ensures the cheddar clings perfectly to the pastry layers without any gritty starch getting in the way of a smooth melt. Then, freeze the twisted dough for exactly ten minutes before baking.
Trust me, this simple step makes all the difference.

Ingredients
- 1 sheet puff pastry, thawed but cold (approx. 250g)
- 1 cup sharp cheddar cheese, freshly grated (approx. 100g)
- 1/4 cup finely minced fresh jalapenos (seeds removed)
- 1/2 tsp Diamond Crystal kosher salt
- 1/4 tsp garlic powder
- 1 large egg, beaten (for egg wash)
- 1 tbsp water
Directions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Roll out the cold puff pastry sheet on a lightly floured surface into a rectangle, about 10x12 inches.
- Brush the surface lightly with the egg wash (egg beaten with water) using a pastry brush.
- Sprinkle the freshly grated cheddar, minced jalapenos, garlic powder, and Diamond Crystal kosher salt evenly over one half of the pastry sheet.
- Fold the empty half of the pastry over the filled half, pressing down firmly with your hands to seal the edges and trap the cheese.
- Use a sharp knife or pizza cutter to slice the pastry into 1-inch wide strips.
- Twist each strip 3 to 4 times, holding both ends, and place them on the prepared baking sheet, pressing the ends down slightly.
- Freeze the baking sheet with the twists for 10 minutes to firm up the butter.
- Brush the tops of the twists with the remaining egg wash and bake for 18 to 20 minutes until puffed and deeply golden brown.
Notes
- Always use Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half to avoid over-salting.
- Grating cheese from a block is essential because pre-packaged cheese is coated in cellulose, which absorbs moisture and prevents the cheese from melting into a cohesive, gooey layer.
- Watch the twists closely during the last 3 minutes of baking; the high fat content in puff pastry means they can go from perfectly golden to burnt very quickly.
- Leftover twists will lose their crispness in the fridge, but you can easily revive them in a 350°F oven for 5 minutes.
- Keep the puff pastry as cold as possible; if the dough becomes too warm and sticky while twisting, pop it back in the fridge for 5 minutes before continuing.
Serving Suggestions
These warm, flaky twists are fantastic on their own, but pairing them with the right dip or side takes them to the next level.
- Pair them with a cool, creamy dip like our Tzatziki Sauce Recipe to balance the spicy kick of the jalapenos.
- Arrange them on a party platter next to some crispy Jalapeno Popper Quesadillas for the ultimate game-day spread.
- Serve them alongside a warm bowl of soup for a cozy, comforting lunch.
- Drizzle them with warm honey or hot honey right out of the oven for a sweet-and-spicy flavor explosion.
Storage and Reheating
If you somehow end up with leftovers, let them cool completely on a wire rack before transferring them to an airtight container.
Storing them in the fridge will inevitably make the pastry soft and a bit sad.
To bring back that glorious, shatteringly crisp texture, avoid the microwave at all costs because it will turn the pastry into a rubbery mess.
Instead, slide them into a 350°F (175°C) oven or air fryer for 4 to 5 minutes until the cheese sizzles again.
They will taste brand new.
Ingredient Substitutes
If you don't have everything on hand, don't panic—here are a few easy swaps that work beautifully.
- Puff Pastry: If you can't find puff pastry, you can use crescent dough sheets, though they will be slightly softer and less flaky.
- Sharp Cheddar: Swap this out for Monterey Jack, Pepper Jack, or Gruyere for a different flavor profile.
- Jalapenos: If you want a milder twist, use finely chopped canned green chiles or even a pinch of red pepper flakes.
- Garlic Powder: You can use onion powder or smoked paprika to add a smoky depth to the filling.
These twists have officially become my go-to recipe whenever I need a quick, impressive appetizer that makes everyone think I spent hours in the kitchen, and I hope they bring just as much joy to your next gathering.
