Ingredients

  • 1/4 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice

  • 1 tsp Diamond Crystal kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1.5 cups panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 large eggs, beaten
  • Fresh parsley and lemon wedges for serving

Directions

  1. Whisk olive oil, lemon juice, minced garlic, oregano, kosher salt, and black pepper in a bowl. Add chicken tenders, toss to coat, and marinate for at least 30 minutes.
  2. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper. Set up a wire rack on top of the baking sheet for maximum air circulation.
  3. In a shallow dish, combine the panko breadcrumbs and grated parmesan cheese. In a second shallow dish, beat the eggs.
  4. Remove each chicken tender from the marinade, letting excess drip off. Dip into the beaten egg, then press firmly into the panko-parmesan mixture to coat completely.

  • We highly recommend using Diamond Crystal kosher salt; if you are using Morton's kosher salt or fine table salt, cut the volume by half to avoid over-salting.

  • Do not leave the tenders under the broiler unattended at the end; the high fat content in the parmesan cheese can transition from golden to burnt in under thirty seconds.
