These crispy smashed potatoes are boiled, crushed, roasted to golden perfection, and topped with a tangy sun-dried tomato feta whip and a drizzle of spicy hot honey.

Crispy Smashed Potatoes with Sun-Dried Tomato Feta & Hot Honey
Why This Recipe Works:
  • Boiling in heavily salted water seasons the potatoes from the inside out while gelatinizing the exterior starches.
  • Allowing the potatoes to steam-dry ensures maximum crunch by removing excess moisture that would otherwise cause steaming.
  • The whipped feta provides a cool, salty, and tangy contrast to the warm, crispy potatoes and sweet, spicy hot honey.

I still remember the chilly October evening I tried making smashed potatoes for my sister's housewarming party, only to serve a tray of sad, soggy spuds that clung to the baking sheet like wet cardboard.

I had to scrape them off with a metal spatula, pressing my thumb hard against the handle until my wrist throbbed, which got annoying fast.

The issue, as I later learned through trial and error, comes down to moisture control and starch gelatinization.

Bear with me here, because the physics of this is fascinating: if you don't let the boiled potatoes steam-dry completely before smashing them, the trapped water turns into steam in the oven, which prevents the surface from dehydrating and crisping up in the hot oil. This brand of potato—usually a high-starch Russet—fails every single test because it crumbles into dust, whereas waxy Yukon Golds hold their structural protein matrix beautifully.

My foolproof fix is simple: boil them until tender, split them open, and let them sit on a wire rack for ten minutes.

Then, we coat them in olive oil and roast them at a high temperature before crowning them with a creamy, whipped sun-dried tomato feta and a generous drizzle of spicy hot honey.

Ingredients

  • 1.5 lbs baby Yukon Gold potatoes (about 12-15 small potatoes)
  • 2 tablespoons Diamond Crystal kosher salt (for boiling water)
  • 3 tablespoons extra virgin olive oil, divided
  • 1/2 teaspoon freshly cracked black pepper
  • 4 oz feta cheese, crumbled
  • 2 oz cream cheese, softened
  • 3 tablespoons oil from sun-dried tomatoes
  • 1/4 cup oil-packed sun-dried tomatoes, finely chopped
  • 2 tablespoons hot honey
  • Fresh oregano leaves for garnish

Directions

  1. Place the baby Yukon Gold potatoes in a large pot and cover with cold water by at least an inch. Add 2 tablespoons of Diamond Crystal kosher salt and bring to a boil over high heat.
  2. Reduce heat to medium and simmer for 15 to 20 minutes, or until the potatoes are easily pierced with a paring knife. Drain them thoroughly in a colander.
  3. Arrange the drained potatoes on a wire rack or clean baking sheet and let them steam-dry undisturbed for 10 minutes. This step is crucial for achieving a crispy exterior.
  4. Preheat your oven to 425°F (218°C). Drizzle 2 tablespoons of olive oil onto a large rimmed baking sheet.
  5. Place the potatoes on the oiled baking sheet. Use the flat bottom of a heavy glass or a potato masher to gently press down on each potato until it is about 1/2-inch thick but still holds together.
  6. Drizzle the tops of the smashed potatoes with the remaining 1 tablespoon of olive oil and season with freshly cracked black pepper. Roast for 25 to 30 minutes, flipping halfway through, until the edges are deeply golden and incredibly crispy.
  7. While the potatoes roast, prepare the whipped feta. In a food processor, combine the crumbled feta, softened cream cheese, and sun-dried tomato oil. Blend until completely smooth and creamy, then stir in the finely chopped sun-dried tomatoes.
  8. Spread the whipped sun-dried tomato feta onto a serving platter. Arrange the hot, crispy smashed potatoes on top, drizzle generously with hot honey, and garnish with fresh oregano leaves.

Notes

  • I highly recommend using Diamond Crystal kosher salt for boiling; if you only have Morton's kosher salt, cut the volume in half (use 1 tablespoon instead of 2) to avoid over-salting.
  • Yukon Gold potatoes are ideal here because their medium-starch content balances a fluffy interior with a sturdy skin that won't disintegrate during the smashing process.
  • Watch the sun-dried tomato feta closely if you decide to warm it; the high sugar content in the sun-dried tomatoes can scorch quickly if exposed to direct heat.
  • Leftover smashed potatoes will lose their signature crunch after a day in the fridge, but you can easily revive them to their former glory in an air fryer or hot skillet.
  • If you don't have store-bought hot honey, you can easily make your own by gently warming honey with a pinch of red pepper flakes and a splash of apple cider vinegar.

Serving Suggestions

These crispy smashed potatoes are incredibly versatile and make a stunning centerpiece for any casual gathering or weeknight feast.

  • These potatoes make an incredible appetizer alongside a fresh Watermelon Feta Salad during warm summer gatherings.
  • Serve them as a hearty side dish next to a plate of Hot Honey Chicken to double down on that sweet and spicy flavor profile.
  • Plate them on a large wooden board as part of a Mediterranean-themed spread with olives, hummus, and pita.
  • Garnish with a sprinkle of flaky sea salt and fresh lemon zest right before serving to cut through the rich whipped feta.

Storage and Reheating

Store any leftovers in an airtight container in the fridge for up to three days.

Do not even think about using the microwave to reheat these, unless you actually enjoy eating rubbery, sad potato skins. The microwave will trap steam inside the potato, completely destroying the crispy crust we worked so hard to build.

Instead, toss them into a preheated air fryer at 380°F (193°C) for about 5 to 7 minutes.

If you don't have an air fryer, a hot cast-iron skillet with a tiny splash of olive oil works beautifully to crisp the bottoms back up. Just keep the whipped feta separate until you are ready to serve.

Ingredient Substitutes

If you find yourself missing a few ingredients, don't panic—here are some easy swaps that work beautifully:

  1. Feta Cheese: You can substitute goat cheese or whipped ricotta for a milder, creamier base.
  2. Hot Honey: Regular honey mixed with a pinch of cayenne pepper or a dash of hot sauce makes a quick and easy alternative.
  3. Yukon Gold Potatoes: Red potatoes will also work well, though they may be slightly less fluffy on the inside.
  4. Sun-Dried Tomatoes: Roasted red peppers can be finely chopped and stirred into the whipped feta instead.

I hope these crispy spuds bring as much joy to your table as they do to mine—just remember to let them steam-dry, and you'll have perfect, crunchy potatoes every single time!
