Directions

  1. Place the baby gold potatoes in a large pot and cover with cold water by at least an inch. Add 1 tablespoon of Diamond Crystal kosher salt and bring to a boil over high heat.
  2. Reduce the heat to medium and simmer for 15 to 20 minutes, or until the potatoes are easily pierced with a fork. Drain them thoroughly in a colander.
  3. Preheat your oven to 425°F (218°C). Let the potatoes sit in the colander for 10 minutes to steam-dry; this step is crucial for achieving maximum crispiness.
  4. Arrange the dried potatoes on a large, parchment-lined baking sheet. Use the flat bottom of a sturdy glass or a potato masher to gently press down on each potato until it flattens to about 1/2-inch thickness, keeping them in one piece.
  5. In a small bowl, whisk together the olive oil, minced garlic, garlic powder, and black pepper. Brush this mixture generously over the tops of the smashed potatoes.
  6. Roast in the preheated oven for 20 minutes. Carefully flip each potato using a thin spatula.

Let's be honest: these are absolutely perfect straight out of the oven, but if you have leftovers, store them in an airtight container in the fridge for up to 3 days.

Do not use the microwave.

Instead, revive them in a 400°F air fryer for 5 minutes, or on a hot cast-iron skillet with a tiny splash of olive oil to re-gelatinize those starches.

I don't recommend freezing these once they are fully roasted and cheesed because the dairy gets a tad clumsy and grainy upon thawing.

It is simply not worth the disappointment.
