Directions

- Low-moisture part-skim mozzarella is essential here because its tight protein matrix releases far less water and fat during melting than fresh mozzarella.
- I tested this with pre-shredded store-brand mozzarella, and it failed because of the excessive anti-caking cellulose coating; grating your own cheese from a block yields a much better melt.
