Why This Recipe Works:
  • Roasting mushrooms first removes excess moisture, preventing a watery sauce.
  • Starchy pasta water acts as a natural emulsifier to bind the melted feta.
  • High-fat Greek feta melts into a smoother, creamier coating than low-fat alternatives.

I still remember the chilly Tuesday night I tried to jump on the viral baked feta trend, only to end up with a watery, curdled mess that made me want to chuck my favorite ceramic baking dish right out the window. My forearms actually ached from trying to whisk the broken sauce back into submission.

It was incredibly humbling.

The issue lies in the physics of moisture release. Cherry tomatoes dump water as they burst, but when you swap them for mushrooms, the fungi act like sponges that sweat out liquid and break your emulsion.

To fix this, we roast the mushrooms separately at high heat to drive off excess water and concentrate their earthy sugars through the Maillard reaction. Then, we combine them with a block of high-quality Greek feta and a splash of starchy pasta water to bind everything into a glossy, cohesive dream.

I've used this block-baking technique for everything from roasted potatoes with baked feta and garlic to quick weeknight bakes.

While the classic tomato version gets all the hype, this baked feta pasta with mushrooms brings a savory, umami depth that tomato-haters will adore. If you love a rich, creamy cheese sauce, this baked method is a game-changer.

Trust me, this method is foolproof.

Ingredients

  • 8 oz (225g) dried pasta (like cavatappi or penne)
  • 1 block (8 oz / 225g) high-quality Greek feta cheese (in brine)
  • 16 oz (450g) cremini mushrooms, sliced
  • 4 cloves garlic, smashed
  • 1/2 cup extra virgin olive oil
  • 1 tsp Diamond Crystal kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 cup reserved starchy pasta water
  • Fresh basil leaves, torn, for serving

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the sliced mushrooms and smashed garlic with half of the olive oil, salt, and pepper on a large baking sheet.
  3. Place the block of feta in the center of a baking dish, surround it with the mushroom mixture, and drizzle the remaining olive oil over the cheese.
  4. Bake for 25 to 30 minutes until the feta is soft and golden on top and the mushrooms are deeply caramelized.
  5. While baking, cook the pasta in salted water until al dente, reserving 1/2 cup of pasta water before draining.
  6. Mash the warm feta and garlic with a fork, then stir in the pasta, mushrooms, and reserved pasta water to create a smooth, creamy sauce.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you are using fine table salt, cut the volume in half (use 1/2 teaspoon instead of 1 teaspoon) to avoid over-salting.
  • Always choose feta sold in blocks of brine rather than pre-crumbled varieties, as crumbles are coated in anti-caking agents (like cellulose) that disrupt the protein matrix and prevent smooth melting.
  • Keep a close eye on the garlic cloves in the baking dish; if they start turning dark brown before the feta is soft, fish them out early so they don't impart a bitter, burnt flavor to your sauce.
  • Leftovers will tighten up significantly in the fridge as the fats solidify, so you will need to splash in a tablespoon of water or milk when reheating to restore the creamy texture.

Serving Suggestions

To round out this comforting meal, pair the rich, savory pasta with bright, fresh sides that cut through the decadence of the warm cheese sauce.

  • Pair this rich pasta with a crisp, acidic side like our Greek Zucchini Noodle Salad to cut through the decadence.
  • Serve alongside warm, crusty bread to scoop up every last drop of the velvety cheese sauce.
  • Top with a handful of fresh arugula tossed in lemon juice for a peppery, bright contrast.
  • Garnish with extra cracked black pepper and a pinch of red pepper flakes for a subtle kick.

Storage and Reheating

Store leftovers in an airtight container.

Keep the container in the refrigerator for up to three days. Because feta is high in fat, the sauce will solidify into a thick, paste-like consistency once chilled, which is completely normal.

To reheat, avoid the microwave if possible. The intense, uneven heat can easily break the delicate emulsion and leave you with a greasy puddle.

Instead, warm it gently in a skillet over medium-low heat. Splash in a tablespoon of water or milk, stirring constantly with a wooden spoon until the sauce relaxes back into its original, velvety state.

Ingredient Substitutes

If you need to swap out ingredients based on what is in your pantry, these alternatives will keep the dish absolutely delicious:

  1. Feta Cheese: Swap with a block of whole-milk cream cheese or goat cheese for an equally creamy, tangy base.
  2. Cremini Mushrooms: Use white button mushrooms or wild shiitakes if you want a deeper, woodsy flavor profile.
  3. Cavatappi Pasta: Any short, ridged pasta like penne, rigatoni, or even Creamy Spinach and Mushroom Orzo works beautifully to catch the sauce.
  4. Olive Oil: Avocado oil can be used, though you will miss the signature grassy notes of a good extra virgin olive oil.

This dish has officially earned a permanent spot in my weeknight rotation, and I promise it will do the same for yours once you experience that first rich, savory bite.
