Ingredients

  • 6 cube steaks (about 1.5 to 2 lbs)
  • 1 tbsp olive oil (for searing)
  • 1 packet onion soup mix

  • 1 can (10.5 oz) condensed cream of celery soup
  • 1 cup beef broth (low sodium)
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp Worcestershire sauce

Directions

  1. Heat olive oil in a large skillet over medium-high heat. Sear the cube steaks for 1 to 2 minutes on each side until a golden-brown crust forms.
  2. Transfer the seared steaks to the bottom of your slow cooker.
  3. In a medium bowl, whisk together the cream of mushroom soup, cream of celery soup, onion soup mix, beef broth, black pepper, garlic powder, and Worcestershire sauce until smooth.
  4. Pour the gravy mixture evenly over the cube steaks in the slow cooker, ensuring they are completely submerged.
  5. Cover and cook on LOW for 6 to 8 hours (or on HIGH for 3 to 4 hours) until the beef is fork-tender.
  6. Serve warm smothered in the rich gravy.

Notes

  • I highly recommend using Diamond Crystal kosher salt if you need to adjust the seasoning; use 1 teaspoon of Diamond Crystal, or scale down to 1/2 teaspoon if using Morton's kosher salt to avoid over-salting.
  • The condensed soups contain modified cornstarch, which acts as a stabilizer to prevent the gravy from breaking or curdling during the long, low-temperature cooking process.
  • Do not cook this on high for longer than 4 hours; the lean nature of cube steak means it will dry out and turn stringy if subjected to high heat for too long.
  • As the gravy cools in the fridge, the gelatin released from the beef connective tissue will cause it to set into a thick, jelly-like consistency. It will liquefy beautifully once reheated.
