Ingredients
- 2 lbs boneless, skinless chicken thighs
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1.5 tsp Diamond Crystal kosher salt
- 1/2 tsp freshly cracked black pepper
- 1 cup high-quality chunky salsa
- 2 tbsp fresh lime juice
- 1/4 cup chopped fresh cilantro
Directions
- Pat the chicken thighs dry with paper towels to ensure the spices adhere properly.
- In a small bowl, mix the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Rub the spice blend all over the chicken thighs, pressing it into the meat with your hands.
- Place the seasoned chicken thighs in the bottom of your crockpot in an even layer.
- Pour the salsa over the chicken, covering it completely.
- Cover and cook on LOW for 4 hours (or HIGH for 2 hours) until the chicken is tender.
- Transfer the chicken to a cutting board and shred using two forks, then return it to the crockpot to absorb the juices.
- Stir in the fresh lime juice and chopped cilantro just before serving.
Notes
- Salt Conversion: I use Diamond Crystal kosher salt. If you are using Morton's kosher salt or fine table salt, cut the volume in half (use 3/4 tsp instead of 1.5 tsp) to avoid over-salting.
- The Thigh Science: Chicken thighs contain high amounts of collagen. During the slow cooking process, this collagen melts into gelatin, keeping the meat incredibly moist even after hours of heat.
- Workflow Warning: Do not leave this on the "warm" setting for more than two hours after cooking. The residual heat will continue to evaporate the liquid, turning your juicy chicken into dry, scorched threads.
- Fridge Behavior: When chilled, the leftover chicken juices will solidify into a jelly-like substance. Don't panic—this is pure gelatin and flavor, and it will melt back into a luscious sauce the second you reheat it.
