Ingredients

  • 1 whole chicken (about 4-5 lbs)
  • 2 tbsp olive oil
  • 1 tbsp Diamond Crystal kosher salt
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 large yellow onion, cut into thick rounds
  • 4 garlic cloves, smashed

Directions

  1. Pat the chicken completely dry with paper towels to ensure the seasoning sticks properly.
  2. In a small bowl, combine the Diamond Crystal kosher salt, smoked paprika, garlic powder, onion powder, black pepper, and dried thyme.
  3. Rub the olive oil all over the chicken, then coat it evenly with the spice mixture, pressing it into the skin.
  4. Place the thick onion slices and smashed garlic cloves at the bottom of the crockpot to act as a natural roasting rack.
  5. Place the seasoned chicken breast-side up on top of the onion slices.
  6. Cover and cook on LOW for 6 hours (or on HIGH for 3 to 4 hours) until the internal temperature reaches 165°F in the thickest part of the breast.
  7. Carefully transfer the chicken to a cutting board, let it rest for 10 minutes, then carve and serve.

Notes

  • We highly recommend using Diamond Crystal kosher salt. If you are using Morton's kosher salt or fine table salt, cut the volume by half to avoid an over-salted bird.
  • Patting the skin completely dry before applying olive oil is essential because water creates steam, which prevents the oil-soluble flavor compounds in the spices from clinging to the skin.
  • Do not open the slow cooker lid during the first four hours of cooking. Every time you lift the lid, you release the trapped thermal mass, adding up to 20 minutes to your total cook time.
  • After a day in the fridge, the rendered juices at the bottom of your storage container will solidify into a rich, gelatinous bone broth. Do not discard this; melt it down to make an incredible pan sauce.
