I still remember standing over my kitchen sink in the sweltering July of 2018, aggressively shaking a colander of sliced cucumbers like it had personally insulted me. My first attempt at a creamy cucumber salad had turned into a watery, sad soup within twenty minutes of mixing.

It was incredibly frustrating.

The culprit is simple plant biology. Cucumbers are basically water balloons holding ninety-five percent water, which is why even a simple Cucumber Dill Salad requires careful prep.

When you slice them and immediately toss them with dressing, salt draws all that water out via osmosis, breaking down the emulsion. I found that tossing the slices with 1 tablespoon of Diamond Crystal kosher salt and letting them drain for thirty minutes is the sweet spot. Squeeze them in a clean kitchen towel afterward until your forearms ache.

Once dry, they hold onto a rich mix of sour cream, mayonnaise, crispy bacon, and sharp cheddar. It clings beautifully, much like the dressing in my favorite Italian Grinder Salad.

Ingredients

  • 2 large English cucumbers, sliced into 1/4-inch rounds
  • 1 tbsp Diamond Crystal kosher salt (for purging water)
  • 6 slices thick-cut bacon, cooked until crispy and chopped
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 2 tbsp fresh dill, finely chopped
  • 1/2 tsp freshly cracked black pepper

Directions

  1. Place the sliced cucumbers in a large colander set over a bowl or sink. Toss them thoroughly with the kosher salt. Let them sit for 30 minutes to draw out excess moisture.
  2. While the cucumbers drain, cook the bacon in a skillet over medium heat until ultra-crispy. Transfer to paper towels to drain, then chop into bite-sized pieces.
  3. Transfer the drained cucumbers to a clean kitchen towel. Wrap them up and gently but firmly squeeze to remove any remaining water.
  4. In a large mixing bowl, whisk together the sour cream, mayonnaise, dry ranch seasoning, fresh dill, and black pepper until smooth.
  5. Add the dried cucumbers, chopped bacon, and shredded cheddar cheese to the bowl. Toss gently with a spatula until every slice is coated.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.

Notes

  • I highly recommend using Diamond Crystal kosher salt for purging; if you only have fine table salt, cut the amount in half to 1.5 teaspoons to avoid over-salting.
  • English cucumbers are preferred because their thin skins contain less bitter cucurbitacin, meaning you don't have to peel them, preserving their structural integrity and vibrant color.
  • Do not skip the 30-minute draining step or try to rush it; mixing unpurged cucumbers with the dressing will turn your salad into a watery soup within an hour.
  • After 24 hours in the fridge, the bacon will lose some of its crunch, but the purged cucumbers will remain remarkably crisp.

However, the bacon will naturally soften the longer it sits in the dressing. If you plan to make this ahead, I suggest keeping the chopped bacon separate.

Stir the bacon in just before serving to preserve that glorious, smoky crunch. Do not attempt to freeze this salad under any circumstances; the freezing process breaks down the cellular walls of the cucumbers, and once thawed, they will turn into mush, while the sour cream dressing will completely split.

Just eat it fresh.

Ingredient Substitutes

If you need to swap things out based on what's in your pantry, here are the easiest ways to adapt the recipe without losing that signature flavor.

  1. English Cucumbers: Standard slicing cucumbers work, but you must peel them and scrape out the watery seeds with a spoon first.
