  • 1/2 tsp Diamond Crystal kosher salt

Directions

  1. Place the sliced cucumbers in a colander, sprinkle with a pinch of salt, and let them drain for 15 minutes to remove excess water.
  2. Pat the cucumbers dry with a clean kitchen towel or paper towel to ensure the dressing clings to them.
  3. In a large bowl, whisk together the olive oil, lemon juice, honey, poppy seeds, and Diamond Crystal kosher salt until emulsified.
  4. Add the drained cucumbers, quartered strawberries, and sliced red onion to the bowl.
  5. Gently toss the salad to coat everything in the dressing.
  6. Top with crumbled feta cheese and fresh torn mint leaves just before serving.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have Morton's, cut the volume in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an over-salted salad.
  • Cucumbers contain about 95% water, which is why salting them first is crucial; the salt draws out excess moisture via osmosis, leaving the cell walls intact for a superior crunch.
  • Do not dress the salad more than 30 minutes before serving, or the strawberries will begin to macerate and lose their firm texture.
  • While the cucumbers will stay relatively crunchy thanks to the salting step, the strawberries will soften significantly after 24 hours in the fridge, so it is best enjoyed fresh.

Do not freeze this salad under any circumstances. The freezing process destroys the cellular structure of both cucumbers and strawberries, leaving you with a mushy, unappealing mess upon thawing.

Before serving leftovers, give the bowl a quick toss to redistribute the dressing that has settled at the bottom.
