Directions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk the eggs, heavy cream, Diamond Crystal kosher salt, and black pepper in a medium bowl until completely cohesive and slightly frothy. Whisk until your wrist aches slightly to ensure the whites and yolks are completely integrated.
  3. Heat the olive oil in a 10-inch oven-safe cast-iron skillet over medium heat. Add the diced potatoes and cook, stirring occasionally, until they are golden brown and fork-tender, about 8 to 10 minutes.
  4. Toss the diced red bell peppers into the skillet with the potatoes and sauté for another 3 to 4 minutes until softened.
  5. Stir in the chopped spinach and cook just until wilted, which should take about 1 minute.
  6. Pour the whisked egg mixture directly over the vegetables in the skillet, tilting the pan slightly to ensure the eggs distribute evenly.
