- 1 tsp Diamond Crystal kosher salt
- 1/2 tsp freshly cracked black pepper
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh baby spinach
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/2 tsp dried oregano
Directions
- Preheat your oven to 375°F (190°C). Pat the shrimp completely dry with paper towels to ensure a good sear.
- Heat olive oil in an oven-safe skillet over medium-high heat. Tap your tongs against your hip twice for good luck, then add the shrimp, seasoning with salt and pepper, and cook for 1 minute per side until just pink. Transfer shrimp to a plate.
- Turn the heat down to medium. Add the minced garlic and chopped sun-dried tomatoes, sautéing for 30 seconds until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and dried oregano, letting the sauce thicken for 3 minutes.
- Stir in the fresh baby spinach until it just begins to wilt. Return the shrimp to the skillet, tossing to coat them in the sauce.
- Transfer the skillet to the preheated oven and bake for 8 to 10 minutes until the sauce is bubbling and the shrimp are tender.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have Morton's, use half the amount (1/2 teaspoon instead of 1 teaspoon) to avoid over-salting.
- Freshly grated Parmesan cheese acts as a natural emulsifier because its proteins help bind the fat in the heavy cream to the watery liquids, preventing the sauce from splitting.
- Avoid pre-shredded parmesan in a green can; this brand failed every single test because the added cellulose prevents it from melting smoothly into the sauce.
- Keep a close eye on your garlic when sautéing; garlic burns in under a minute, which will turn your entire cream sauce bitter and ruin the dish.
- After a year of washing my favorite cast-iron skillet, I've found it's the absolute perfect vessel for this bake because it retains heat beautifully.
