Directions

  1. Sauté the mushrooms: Heat butter in a skillet over medium-high heat. Add the chopped mushrooms and cook until their liquid evaporates and they turn golden brown, about 8 minutes. Add minced garlic and thyme, cooking for another minute until fragrant.
  2. Mix the filling: Transfer the mushroom mixture to a bowl and let it cool slightly. Stir in the cream cheese, mozzarella, half of the kosher salt, and black pepper until well combined.
  3. Prep the chicken: Pat the chicken breasts dry with paper towels. Place one hand flat on top of a breast and use a sharp chef's knife to slice horizontally into the thickest part, cutting about 3/4 of the way through to create a pocket flap.
  4. Stuff and seal: Spoon a quarter of the mushroom mixture into each chicken breast pocket. Press the flap down and secure the edges with 2-3 toothpicks to seal the filling inside. Season the outside of the chicken with the remaining salt and pepper.
