- 1.5 cups graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 2 tbsp granulated sugar
- 1/4 tsp Diamond Crystal kosher salt
- 16 oz full-fat cream cheese, softened
- 1/2 cup pistachio paste (unsweetened)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1.25 cups heavy whipping cream, cold
- 1/4 cup sour cream
- 1/2 cup shelled pistachios, finely chopped
Directions
- In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and salt. Press the mixture firmly into the bottom of a 9-inch springform pan using the flat bottom of a measuring cup until your wrist aches. Freeze for 10 minutes.
- In a large bowl, beat the softened cream cheese, pistachio paste, powdered sugar, sour cream, and vanilla extract until completely smooth and free of lumps.
- In a separate chilled bowl, whip the cold heavy cream to stiff peaks.
- Gently fold the whipped cream into the pistachio cream cheese mixture in three batches using a rubber spatula, being careful not to deflate the trapped air.
