Directions
- Line an 8x8-inch baking pan with parchment paper, leaving a 2-inch overhang on the sides for easy removal.
- In a medium bowl, stir together the rolled oats, melted butter, 1 tablespoon of honey, and Diamond Crystal kosher salt until the oats are evenly coated.
- Transfer the oat mixture to the prepared pan and press it down firmly with the bottom of a flat glass or your hands until it forms a tight, even crust.
- In another bowl, whisk together the full-fat Greek yogurt, vanilla extract, and the remaining 2 tablespoons of honey until completely smooth.

- We highly recommend using Diamond Crystal kosher salt; if you are using Morton's kosher salt or fine table salt, cut the volume in half (use 1/8 teaspoon) to avoid an overly salty crust.
- Always opt for full-fat Greek yogurt (like Fage 5%). The higher fat content reduces the water-to-fat ratio, which physically prevents large ice crystals from forming, ensuring a creamy bite instead of a rock-hard one.
- Do not skip lining the pan with parchment paper overhang. If you press the granola directly into the metal pan, the butter will freeze and lock the crust to the bottom, making it impossible to remove without shattering the bars.
