  • 1 tsp apple cider vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp Diamond Crystal kosher salt

  • 2 tbsp chopped fresh chives

Directions

  1. Bring a large pot of salted water to a rolling boil. Cook the gluten-free pasta according to package directions, but check it 1 minute early to ensure it remains al dente.
  2. Drain the pasta immediately in a colander. Rinse thoroughly with cold running water for 30 seconds to wash away excess surface starch and stop the cooking process, then set aside to drain completely.
  3. While the pasta cooks, fry the bacon slices in a skillet over medium heat until deeply browned and crispy. Transfer to paper towels to drain, reserving 1 tablespoon of the warm bacon fat in a small bowl.
  4. In a medium bowl, whisk together the avocado oil mayonnaise, reserved warm bacon fat, lemon juice, apple cider vinegar, garlic powder, kosher salt, and black pepper until smooth and emulsified.
  5. In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, diced red onion, and chopped chives. Pour the dressing over the top and toss gently with a rubber spatula until every noodle is coated.

  • I highly recommend Barilla Gluten-Free Rotini (a corn and rice blend). If using a pure brown rice pasta like Jovial, reduce the boil time by 90 seconds to prevent mushiness.
  • Rinsing gluten-free pasta under cold water is non-negotiable. It washes away free amylose starch on the noodle surface, preventing the pasta from clumping into a solid block as it cools.
  • Keep a close eye on your bacon during the final minutes of frying. Because thick-cut bacon has varying sugar content depending on the cure, it can go from perfectly crispy to bitter and burnt in a matter of 30 seconds.
  • After 24 hours in the fridge, gluten-free pasta naturally undergoes starch retrogradation, making it slightly firmer. To revive the creamy texture, toss with a teaspoon of warm water or olive oil before serving.
  • For salt conversions, we use Diamond Crystal kosher salt. If you are using Morton's kosher salt or fine table salt, cut the measurement in half (use 1/4 tsp) to avoid over-salting.
