Flaky, buttery crescent rolls stuffed with a creamy, seasoned shrimp and crab filling. A crowd-pleasing appetizer that is incredibly easy to make.

Shrimp and Crab Crescent Rolls
Why This Recipe Works:
  • Egg yolk emulsification prevents the cream cheese from splitting and leaking during baking.
  • Pre-cooking and thoroughly drying the shrimp ensures no excess water ruins the flaky pastry layers.
  • Using high-quality, full-fat cream cheese provides the necessary thermal mass to keep the filling rich and stable.

I still remember the exact winter afternoon my aunt dropped a tray of hot, seafood-stuffed pastries onto the kitchen counter, her knuckles still dusted with flour. I burned the roof of my mouth because I couldn't wait more than ten seconds to grab one.

They were hands down the best thing I'd ever tasted.

But when I tried replicating them years later, the filling turned into a watery swamp that blew right through the seams of the pastry. The culprit was excess moisture from the seafood and a cream cheese base that broke under the oven's intense heat.

I tested this with three different brands of cream cheese, and the generic store brand failed every single test. Its high water content completely destroyed the dough's delicate protein matrix.

The simple fix is twofold: we must aggressively drain the seafood and bind the filling with an egg yolk. Think about this in terms of physics. The egg yolk acts as an emulsifier. It holds the fats and liquids together so the filling clings to the pastry instead of running out onto your baking sheet.

Trust me on this one, it works beautifully.

You don't need any fancy equipment to pull this off. Just grab a bowl, a spatula, and your hands to pinch those crescent seams shut.

Ingredients

  • 8 oz cream cheese, softened (preferably Philadelphia brand)
  • 1/2 cup lump crab meat, drained and picked through
  • 1/2 cup cooked shrimp, finely chopped (see our guide on Garlic Butter Shrimp for prep tips)
  • 1 large egg yolk
  • 1/4 cup green onions, finely sliced
  • 1/2 tsp Old Bay seasoning
  • 1/4 tsp Diamond Crystal kosher salt
  • 1/4 cup shredded mozzarella cheese
  • 2 cans (8 oz each) refrigerated crescent roll dough
  • 1 tbsp unsalted butter, melted
  • 1/2 tsp sesame seeds (optional garnish)

Directions

  1. Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. In a medium mixing bowl, combine the softened cream cheese, drained crab meat, chopped shrimp, egg yolk, green onions, Old Bay, Diamond Crystal kosher salt, and shredded mozzarella.
  3. Stir the mixture thoroughly with a spatula until the ingredients are evenly distributed and the mixture is smooth.
  4. Unroll the crescent roll dough and separate it into triangles along the perforated lines.
  5. Place about one tablespoon of the seafood filling onto the wide end of each dough triangle.
  6. Roll the dough up starting from the wide end, tucking the corners in slightly, and pinch the side seams firmly with your fingertips to seal the filling inside.
  7. Arrange the rolled crescents on the prepared baking sheet, leaving about two inches of space between each.
  8. Brush the tops of the rolls with melted butter and sprinkle with sesame seeds if desired.
  9. Bake for 12 to 15 minutes, or until the pastry is puffed and a deep golden brown. Let cool for 5 minutes before serving.

Notes

  • Brand Recommendation: Use Philadelphia brand block cream cheese. Do not use tub or whipped cream cheese, as they contain more air and water, which will cause the filling to liquefy and leak.
  • Science-Backed Rationale: The egg yolk is crucial here because it contains lecithin, a natural emulsifier. This binds the fat in the cream cheese with the moisture from the seafood, preventing the filling from splitting under high heat.
  • Workflow Warning: Do not let the crescent dough sit at room temperature for too long before rolling. Warm dough loses its structural integrity, making it incredibly difficult to seal, which leads to filling blowouts in the oven.
  • Storage Behavior: Leftovers can be stored in an airtight container in the fridge for up to two days. However, the pastry will lose its crispness over time as it absorbs moisture from the filling; reheat in an oven or air fryer to restore the crunch.

Serving Suggestions

These warm, savory rolls are best enjoyed fresh out of the oven when the pastry is at its flakiest. Pair them with complementary dishes to create a stunning party spread.

  • Serve alongside a bowl of Whipped Feta Dip and warm pita chips for an elegant appetizer table.
  • Pair with a crisp, acidic white wine like Sauvignon Blanc to cut through the richness of the crab and cream cheese.
  • Offer a side of sweet chili sauce or spicy remoulade for dipping.
  • If you love this seafood and cheese combination, try our Shrimp and Crab Biscuit Melts for a quick lunch variation.
  • Garnish the serving platter with fresh lemon wedges and dill sprigs to add a pop of color and brightness.

Storage and Reheating

If you happen to have leftovers, store them in a single layer inside an airtight container lined with a paper towel. The paper towel is essential because it absorbs any condensation that forms as the rolls cool, preventing the pastry from turning into a soggy mess.

They will keep in the refrigerator for up to two days. Do not freeze them after baking, as the cream cheese filling will undergo syneresis (water separation) upon thawing, leaving you with a watery, unappealing texture.

To reheat, skip the microwave entirely unless you enjoy rubbery pastry. Instead, pop them into a 350°F (175°C) oven or air fryer for 5 to 8 minutes until the filling is hot and the exterior crispness is restored.

Ingredient Substitutes

If you need to swap ingredients based on what is in your pantry, here are the best tested alternatives.

  1. Seafood: You can use all crab or all shrimp if you don't have both. Alternatively, finely chopped lobster meat works beautifully for an ultra-luxurious twist.
  2. Crescent Dough: If you want to make your own dough from scratch, check out our guide on Croatian Croissants for a beautifully laminated pastry alternative.
  3. Old Bay Seasoning: Swap with Cajun seasoning or a pinch of cayenne pepper and garlic powder for a different flavor profile.
  4. Mozzarella: Monterey Jack or mild white cheddar can be used in place of mozzarella to add a sharper bite.

At the end of the day, these little rolls are all about comfort and sharing. Don't worry if a little filling leaks out of one or two—those crispy, cheesy bits left on the baking sheet are honestly the cook's tax anyway.
