- 2 large eggs, beaten
- 1.5 cups Kikkoman panko breadcrumbs
- 4 slices deli ham, patted dry with paper towels
- 4 slices Swiss cheese
- Cooking spray (olive oil or avocado oil)
- 1/4 cup yellow mustard
- 1/4 cup honey
Directions
- Preheat your oven to 400°F (200°C). Set a wire cooling rack inside a large rimmed baking sheet and spray it lightly with cooking spray.
- Season the pounded chicken breasts evenly on both sides with the Diamond Crystal kosher salt and black pepper.
- Set up your dredging station: place the flour in one shallow bowl, the beaten eggs in a second bowl, and the panko breadcrumbs in a third bowl.
- Dredge each chicken breast in the flour, shaking off the excess, then dip completely into the egg wash, and finally press firmly into the panko breadcrumbs until fully coated.
- Place the breaded chicken onto the prepared wire rack and spray the tops generously with cooking spray to help them brown.
- Bake for 15 minutes, or until the chicken reaches an internal temperature of 160°F (71°C) and the breadcrumbs are golden brown.
- Remove the baking sheet from the oven and turn the broiler to high. Fold one slice of dry deli ham on top of each chicken breast, then top with a slice of Swiss cheese.
- Broil for 2 to 3 minutes, watching closely, until the cheese is melted, bubbling, and slightly golden.
- While the chicken rests for 2 minutes, whisk together the yellow mustard and honey in a small bowl to create the dipping sauce. Serve immediately.

- We highly recommend Kikkoman Panko Breadcrumbs; if substituting with standard breadcrumbs, reduce the volume by 25% as they pack much tighter.
- Pounding the chicken to an even thickness is crucial because it breaks down the muscle fibers, ensuring rapid heat transfer and preventing the outer edges from drying out before the center cooks.
- Keep a close eye on the broiler during the final step; Swiss cheese has a high sugar and fat content that can go from beautifully blistered to charred and bitter in under thirty seconds.
