  • 1/4 teaspoon freshly cracked black pepper
  • 1/4 cup vegetable broth
  • 1/4 cup freshly grated Parmesan cheese
  • Fresh basil leaves, torn, for garnish

Directions

  1. Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large, heavy-bottomed skillet over medium-high heat until the butter foams.
  2. Add the dry gnocchi directly from the package into the skillet in a single layer, ensuring they do not overlap.
  3. Let the gnocchi sear undisturbed for 4 to 5 minutes until the bottoms are deeply golden brown and crispy.
  4. Flip the gnocchi using a wide spatula and cook for another 3 to 4 minutes until they are crispy on both sides, then transfer them to a plate.
  5. In the same skillet, add the remaining olive oil and butter, then toss in the sugar snap peas, red bell pepper, and yellow squash.
  6. Sauté the vegetables for 3 to 4 minutes until they are tender-crisp and vibrant.
  7. Stir in the minced garlic, Diamond Crystal kosher salt, and black pepper, cooking for 1 minute until fragrant.
  8. Pour in the vegetable broth, scraping up any browned bits from the bottom of the pan, and let it simmer for 1 minute.

  • Salt Conversion: This recipe is tested using Diamond Crystal kosher salt. If you are using Morton's kosher salt or fine table salt, cut the volume in half (use 1/2 teaspoon instead of 1 teaspoon) to avoid over-salting.
  • Gnocchi Selection: Use shelf-stable vacuum-packed gnocchi. Fresh or frozen gnocchi contain too much surface moisture and will stick aggressively to the pan, ruining the crispy texture.
  • The Searing Science: Do not crowd the pan. If the gnocchi are piled on top of each other, they will trap steam, preventing the Maillard reaction from creating that coveted crispy crust.

I do not recommend freezing this completed dish. The vegetables will turn mushy and watery upon thawing, completely ruining the texture.
