These gooey Caramel Rice Krispie Treats are packed with melted marshmallows, salted butter, and a rich, glossy drizzle of dulce de leche.

Gooey rice krispie treats drizzled with dulce de leche and caramel
Why This Recipe Works:
  • Low-temperature melting prevents the sugar in the marshmallows from crystallizing, keeping the treats soft.
  • A touch of heavy cream adds fat and moisture, ensuring long-term chewiness.
  • Swirling in rich dulce de leche adds a deep, caramelized flavor profile that cuts through the simple sweetness.

I still remember the absolute disaster of my first solo bake sale in college, where I tried to swap real butter for coconut oil in a batch of cereal treats.

They turned into a greasy, rock-hard pile of sadness that nobody touched.

The science behind this tragedy is actually pretty simple: when you blast marshmallows over high heat, you dry out the water content and force the sucrose to recrystallize into a brittle, tooth-shattering matrix.

To fix this, we melt our butter and marshmallows over the lowest possible heat, stirring constantly with a silicone spatula until they just barely liquefy, then throw in a splash of heavy cream and a generous pinch of Diamond Crystal kosher salt to keep the mixture incredibly pliable before folding in a thick, luxurious swirl of canned dulce de leche.

Trust me on this one, you do not need any fancy pastry skills to pull this off.

It is a total game-changer.

I tested this with several caramel variations before landing on dulce de leche, but if you want a different spin on this salty-sweet combo, check out our Chocolate Caramel Pretzel Bars which use a similar flavor profile.

Ingredients

  • 5 tbsp (70g) unsalted butter
  • 10 oz (283g) mini marshmallows, plus 2 extra cups kept separate
  • 1 tbsp heavy cream
  • 1.5 tsp Diamond Crystal kosher salt
  • 1 tsp pure vanilla extract
  • 6 cups (180g) crisp rice cereal
  • 1/2 cup (150g) canned dulce de leche, warmed slightly
  • 1/4 cup sea salt caramel sauce, for final drizzle

Directions

  1. Line a 9x9-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal, and spray lightly with non-stick cooking spray.
  2. In a large, heavy-bottomed pot or Dutch oven, melt the unsalted butter over low heat, watching it closely so it does not brown prematurely.
  3. Add the 10 ounces of mini marshmallows, heavy cream, and Diamond Crystal kosher salt, stirring constantly with a silicone spatula until the marshmallows are completely melted and smooth.
  4. Remove the pot from the heat and stir in the vanilla extract until fully incorporated.
  5. Gently fold in the crisp rice cereal and the remaining 2 cups of mini marshmallows until the cereal is evenly coated and the whole marshmallows partially melt into gooey pockets.
  6. Dollop half of the warmed dulce de leche over the mixture and fold once or twice to create thick ribbons of caramel throughout the treats.
  7. Transfer the mixture to the prepared pan, using damp fingers to gently press the mixture into an even layer without packing it down tightly.
  8. Drizzle the remaining dulce de leche and the sea salt caramel sauce over the top in a decorative pattern, then let the treats cool at room temperature for at least 1 hour before slicing.

Notes

  • Salt Conversion: We highly recommend using Diamond Crystal kosher salt for this recipe. If you only have fine table salt on hand, reduce the amount by half (use 3/4 teaspoon instead of 1.5 teaspoons) to avoid over-salting.
  • The Science of Softness: Adding a tablespoon of heavy cream introduces milk fat and liquid, which interferes with the sugar crystallization process in the melted marshmallows. This keeps the treats soft and chewy for days.
  • Temperature Control: Never rush the melting process by turning up the heat. High heat scorches the marshmallows and forces the sugar molecules to bond tightly, resulting in a rock-hard texture once cooled.
  • Storage Behavior: Store these treats in an airtight container at room temperature. Do not refrigerate them, as the cold temperature will harden the caramel and make the cereal lose its crispness.
  • Alternative Caramel: If you cannot find canned dulce de leche, you can make a similar version using our technique from our Soft rice krispie bars topped with caramel drizzle and glossy finish.

Serving Suggestions

These treats are incredibly rich and gooey, making them a showstopper on their own, but you can easily elevate the presentation with a few simple additions.

  • Serve alongside a cold glass of milk or a hot cup of black coffee to balance the intense sweetness.
  • Cut them into mini bite-sized squares and arrange them on a dessert platter for parties.
  • Top each square with a tiny pinch of flaky sea salt right before serving to enhance the caramel notes.
  • Pair them with a scoop of vanilla bean ice cream for a decadent plated dessert.
  • Pack them in individual parchment bags for a beautiful, transportable bake sale treat.

Storage and Reheating

Keeping these treats at their peak texture is all about avoiding the refrigerator. Cold air is the absolute enemy of marshmallow-based desserts because it crystallizes the fats and sugars. Keep them in a tightly sealed airtight container on your counter instead.

They will stay perfectly gooey for up to four days.

If you find yourself with leftovers that have lost a bit of their magic, do not despair. A quick five-second zap in the microwave will soften the marshmallows right back up.

For longer storage, you can actually freeze these treats. Wrap individual squares tightly in plastic wrap, then place them in a heavy-duty freezer bag for up to three months. Just let them thaw at room temperature for an hour before taking a bite.

Ingredient Substitutes

If you need to swap out some ingredients based on what is in your pantry, here are the best tested substitutes:

  1. Dulce de Leche: If you cannot find dulce de leche, a thick, high-quality salted caramel sauce will work beautifully, though it may be slightly runnier.
  2. Crisp Rice Cereal: You can swap the classic rice cereal for puffed quinoa, cornflakes, or even cocoa-flavored rice cereal for a chocolate-caramel twist.
  3. Heavy Cream: If you are out of heavy cream, a tablespoon of full-fat canned coconut milk or half-and-half will do the trick to keep the treats soft.
  4. Butter: Vegan butter sticks can be substituted at a 1:1 ratio, though the flavor will be slightly less rich.

I hope this recipe brings a little bit of gooey, caramel-drizzled joy to your kitchen. It is the kind of effortless, nostalgic treat that makes everyone smile the second you bring out the tray. Let me know how yours turn out, and happy stirring!
