Ingredients

  • 800g boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup full-fat Greek yogurt (Fage 5% is highly recommended)
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon sweet paprika
  • 1.5 teaspoons Diamond Crystal kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • Zest and juice of 1 large lemon

Directions

  1. In a large bowl, whisk together the Greek yogurt, olive oil, minced garlic, dried oregano, sweet paprika, Diamond Crystal kosher salt, black pepper, lemon zest, and lemon juice until smooth.
  2. Add the cubed chicken to the bowl and toss until every single piece is thoroughly coated in the marinade. Cover and refrigerate for at least 2 hours, or up to 24 hours for maximum flavor penetration.
  3. If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent them from catching fire.
  4. Thread the marinated chicken pieces onto the skewers, leaving a tiny bit of space between each piece so they cook evenly rather than steaming.
  5. Preheat your grill or grill pan over medium-high heat and lightly oil the grates.
  6. Place the skewers on the grill and cook for about 12 to 15 minutes, turning occasionally, until the chicken is beautifully charred and the internal temperature reaches 165°F (74°C).
  7. Remove from the heat and let the chicken rest for 5 minutes before serving to allow the juices to redistribute.

Notes

  • The Salt Standard: I exclusively use Diamond Crystal kosher salt for this recipe. If you only have Morton's kosher salt or standard table salt, cut the volume in half to avoid an aggressively salty batch.
  • The Yogurt Science: Always choose plain, full-fat Greek yogurt (like Fage 5%). Non-fat yogurt lacks the lipid barrier needed to protect the protein matrix, which will result in a drier texture.
  • Prevent the Burn: Because yogurt contains natural sugars and milk solids, it will char quickly. Keep a close eye on your grill temperature and move the skewers to indirect heat if the exterior starts burning before the inside is cooked through.
  • Storage Behavior: Leftovers stored in the fridge will lose some of their initial crispness, but the yogurt marinade keeps the meat remarkably tender even after reheating.
  • Skewering Tip: Don't pack the chicken pieces too tightly on the skewers. Leaving a millimeter of breathing room ensures the heat circulates properly, cooking the meat instead of steaming it.

When you are ready to eat, avoid the microwave at all costs because it will turn your beautifully tender chicken into rubbery nuggets. Instead, gently reheat the chicken in a skillet over medium-low heat with a splash of water or chicken broth, covering the pan with a lid to trap the steam.

This steam-bath method keeps the meat incredibly moist.

If you are planning ahead, you can also freeze the raw chicken directly in the marinade for up to three months. Just let it thaw completely in the fridge overnight before threading it onto your skewers and heading to the grill.

Ingredient Substitutes

If you need to make some adjustments based on what is in your pantry, here are some easy swaps that work beautifully:
