Grilled Chicken Caprese
A juicy, perfectly charred grilled chicken caprese topped with thick slices of fresh mozzarella, ripe tomatoes, and a glossy balsamic glaze.
- Brining is Magic: A brief 20-minute soak in a salted bath alters the chicken's protein structure, allowing it to retain 10% more moisture during grilling.
- High-Heat Char: Grilling over direct medium-high heat creates a beautiful crust via the Maillard reaction before the interior has a chance to dry out.
- The Caprese Shield: Slabs of fresh mozzarella melt over the chicken, trapping steam and keeping the meat incredibly succulent as it rests.
I still remember the humid July afternoon when I completely ruined dinner for my in-laws. I served chicken breasts that had the texture of a dry, dusty chalkboard.
It was mortifying.
The issue is that chicken breast is incredibly unforgiving on a hot grill because it lacks protective fat. Without that buffer, even a single extra minute of heat completely destroys the delicate protein matrix, squeezing out every drop of moisture.
Most people try to fix this by slathering on store-bought marinades that are packed with sugar, which burns to a bitter ash before the meat even cooks through. If you want real flavor, you are much better off using a homemade grilled chicken marinade with olive oil that balances acid and fat perfectly.
But there is an incredibly easy way to guarantee juicy meat every single time.
We start with a quick, acid-balanced wet brine to plump up the muscle fibers. Then, we grill hot and fast before topping the meat with thick slabs of fresh mozzarella and ripe tomatoes.
You can even turn these exact ingredients into a crispy chicken caprese flatbread for a fun Friday night dinner.
Trust me on this one.

Ingredients
- 4 boneless, skinless chicken breasts (about 150g / 5 oz each, pounded to even thickness)
- 1 tbsp Diamond Crystal kosher salt (for the brine)
- 4 cups cold water
- 2 tbsp extra virgin olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Freshly cracked black pepper, to taste
- 4 thick slices fresh mozzarella cheese (about 115g / 4 oz total)
- 4 thick slices ripe beefsteak tomatoes
- 1/4 cup fresh basil leaves, torn
- 2 tbsp high-quality balsamic glaze
Directions
- In a large bowl, dissolve the Diamond Crystal kosher salt in cold water to create a quick brine. Submerge the chicken breasts and let them sit at room temperature for 20 minutes.
- Remove the chicken from the brine and pat it completely dry with paper towels. This step is crucial because surface moisture prevents proper browning.
- Rub each chicken breast with extra virgin olive oil, then season evenly with dried oregano, garlic powder, and freshly cracked black pepper.
- Preheat your grill to medium-high heat (about 400°F / 200°C) and oil the grates thoroughly to prevent sticking.
- Place the chicken on the grill. Cook undisturbed for 5 to 6 minutes, then flip using tongs.
- Immediately place one slice of tomato and one slice of mozzarella on top of each cooked side of the chicken. Cover the grill lid and cook for another 4 to 5 minutes until the cheese is completely melted and bubbly.
- Remove the chicken from the grill and let it rest for 5 minutes. Drizzle with balsamic glaze and scatter fresh basil leaves over the top just before serving.
Notes
- Salt Conversion: We highly recommend using Diamond Crystal kosher salt for this recipe. If you only have Morton's kosher salt or fine table salt, cut the measurement in half to avoid over-salting.
- The Science of Searing: Always pat the chicken completely dry before oiling. Water absorbs a massive amount of energy to evaporate, which delays the Maillard reaction and results in rubbery, gray meat instead of a gorgeous golden crust.
- Cheese Selection: Use fresh mozzarella stored in water for the best meltability. Avoid pre-shredded mozzarella, as it contains anti-caking agents like potato starch that prevent it from melting into a smooth, luxurious blanket.
- Preemptive Workflow Warning: Do not walk away from the grill once you top the chicken with cheese. If any cheese drips onto the burners, it can cause sudden flare-ups that will soot-stain your beautiful chicken.
- Storage Behavior: Leftovers will keep in the fridge for up to 3 days, but the tomatoes will release water and lose their firm texture. For the best experience, store the grilled chicken separately and add fresh tomatoes and cheese when reheating.
Serving Suggestions
This vibrant dish pairs beautifully with light, fresh sides that complement the rich melted cheese and sweet balsamic glaze.
- Complete the meal by pairing this juicy chicken with a side of balsamic grilled vegetables with a touch of garlic flavor for a light, low-carb summer dinner.
- Slice the chicken and layer it onto toasted ciabatta bread to make a gourmet panini that rivals your favorite Italian deli.
- Serve it alongside a bowl of caprese pasta salad to double down on those classic, fresh basil and tomato flavors.
- Plate it over a bed of wild rice or quinoa to soak up all the delicious, savory juices and sweet balsamic glaze.
Storage and Reheating
If you happen to have leftovers, store them in an airtight glass container in the fridge for up to three days.
Reheated tomatoes get incredibly mushy.
To avoid this, I highly recommend scraping off the cooked tomato and cheese before reheating the chicken breast in a skillet with a splash of water over medium-low heat.
Once warm, top it with fresh cheese and a new tomato slice. Pop a lid on the pan for two minutes to melt everything.
Ingredient Substitutes
If you need to make a few adjustments based on what is in your pantry, here are the best swaps that won't sacrifice flavor:
- Fresh Mozzarella: If you cannot find fresh mozzarella, thick slices of provolone or even Monterey Jack will melt beautifully, though they will have a slightly sharper flavor profile.
- Balsamic Glaze: You can easily make your own by simmering 1/2 cup of balsamic vinegar with 1 tablespoon of honey in a small saucepan until it reduces by half and clings to the back of a spoon.
- Chicken Breasts: Boneless, skinless chicken thighs work wonderfully here and are much more forgiving; just increase the grilling time by 2 to 3 minutes per side.
- Fresh Basil: In a pinch, a drizzle of store-bought basil pesto over the melted cheese provides that same herbal punch.
There is something incredibly satisfying about a dinner that looks like it took hours but actually came together in under thirty minutes. Tap your tongs against your hip, fire up the grill, and enjoy every single juicy bite of this summer classic.
