Directions

  1. In a medium bowl, whisk together the soy sauce, brown sugar, lime juice, olive oil, minced garlic, grated ginger, and Diamond Crystal kosher salt.
  2. Add the cubed chicken to the marinade, tossing to coat thoroughly, and let it marinate at room temperature for 15 to 20 minutes.
  3. Thread the marinated chicken cubes onto skewers that have been soaked in water for at least 30 minutes.
  4. Preheat your grill or grill pan over medium-high heat and lightly oil the grates.
  5. Grill the chicken skewers for 5 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C). Tap your tongs against your hip to shake off excess oil before flipping.
  6. Grill the pineapple slices directly on the grates for 2 to 3 minutes per side until beautiful char marks appear, then chop into bite-sized pieces.
