I used to think zucchini was the most boring vegetable on the planet until the summer of 2018 when I accidentally dropped a thick slab of it directly onto the screaming-hot iron grates of my grill.

I fished it out with my bare fingers, yelping as the hot oil stung my thumb.

Most home cooks end up with a pile of mushy, waterlogged green discs because they slice them too thin and salt them way too early. If you don't want to fire up the grill, you can always make roasted zucchini in the oven, but grilling offers a distinct smoky flavor.

Zucchini is basically a sponge made of 95% water, and if you don't use a heavy hand of Diamond Crystal kosher salt (use 1 teaspoon, or half that if using fine table salt) right before it hits the heat, the cellular walls collapse and turn it into baby food.

The simple fix is cutting them into thick, half-inch planks. This pairs beautifully with mains like chicken soaked in our grilled chicken marinade.

While these are best served warm off the grates, they actually hold up beautifully in the fridge for up to three days, though they will lose that initial crisp edge and turn slightly soft. You can even chop up the leftovers to toss into a grilled zucchini and feta chickpea salad.

Ingredients

  • 4 medium zucchini, sliced lengthwise into 1/2-inch thick planks
  • 2 tbsp extra virgin olive oil
  • 1 tsp Diamond Crystal kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh flat-leaf parsley

Directions

  1. Preheat your grill or grill pan to medium-high heat (about 400°F to 450°F). Clean the grates thoroughly and lightly oil them to prevent sticking.
  2. Lay the zucchini planks on a large baking sheet. Brush both sides generously with the extra virgin olive oil.
  3. In a small bowl, mix the kosher salt, black pepper, and garlic powder. Sprinkle the seasoning mix evenly over both sides of the zucchini slices immediately before placing them on the grill.
  4. Place the zucchini slices directly on the hot grill grates. Grill undisturbed for 3 to 4 minutes per side, until deep grill marks appear and the edges are slightly charred but the center remains tender-crisp.
  5. Transfer the grilled zucchini to a serving platter. Drizzle with fresh lemon juice and garnish with chopped fresh parsley before serving.

Notes

  • We highly recommend Diamond Crystal kosher salt; if you are using Morton's kosher salt, reduce the amount by half (use 1/2 teaspoon instead of 1 teaspoon) to avoid over-salting.
  • Olive oil acts as a thermal conductor on the grill, helping to distribute heat evenly across the zucchini's surface to create those perfect charred lines before the interior overcooks.
  • Do not walk away from the grill once the zucchini is on the grates; the oil can cause flare-ups that will turn your beautiful char into bitter, burnt ash in a matter of seconds.
  • As the grilled zucchini cools in the fridge, it will release excess moisture and lose its firm texture, so it is best to reheat them in a dry skillet rather than the microwave.

To reheat, avoid the microwave at all costs unless you want a soggy pile of squash. Instead, heat a dry cast-iron skillet over medium-high heat and sear the slices for about one minute per side to restore some of that charred texture.
