Heavenly Lemon Oreo Dessert
A creamy, no-bake layered lemon dessert featuring a golden Oreo crust, zesty cream cheese layer, instant lemon pudding, and whipped topping.
- Structural Cookie Base: Real Golden Oreos provide a sturdy, buttery foundation that resists getting soggy.
- Perfect Emulsification: Softened cream cheese whipped with powdered sugar creates a moisture barrier that protects the crust.
- Balanced Tartness: Fresh lemon zest cuts through the sweetness of the instant pudding and whipped topping.
My first attempt at a layered refrigerator dessert was a complete disaster because I tried to make a homemade lemon curd that curdled into sweet scrambled eggs.
I actually cried over the sink while scraping the rubbery yellow clumps down the drain.
The problem with most no-bake desserts is that people try to make them too complicated, or they use cheap sandwich cookies that turn into a soggy, waxy paste instead of a clean, structural crust.
Generic sandwich cookies failed every single test because their lipid-to-starch ratio is completely off, meaning they absorb moisture from the filling too quickly and lose all structural integrity. When you use real Golden Oreos, the starch gelatinization in the baked cookie base holds up beautifully against the heavy lemon cream layer, keeping things perfectly crisp even after three days in the fridge.
The simple fix is using name-brand Golden Oreos and pressing the buttery crumbs with the flat bottom of a metal measuring cup until your wrist clicks.
Bear with me here.
Trust me on this one, this is hands down the easiest way to get a clean slice every single time.

Ingredients
- 36 Golden Oreo cookies (divided - 32 for crust, 4 for topping)
- 6 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 8 oz whipped topping (divided)
- Two 3.4 oz boxes instant lemon pudding mix
- 3 cups cold whole milk
- 1 tsp fresh lemon zest
- 1/4 tsp Diamond Crystal kosher salt
Directions
- Crush 32 Golden Oreos in a food processor until fine crumbs form.
- Transfer crumbs to a bowl, pour in melted butter and salt, and stir until it resembles wet sand.
- Press the mixture firmly into the bottom of a 9x13-inch baking dish using the flat bottom of a measuring cup, then freeze for 10 minutes.
- In a medium bowl, beat the softened cream cheese and powdered sugar until smooth and fluffy.
- Fold in half of the whipped topping (4 ounces) until completely combined, then spread this mixture evenly over the chilled crust.
- In a separate bowl, whisk together both boxes of instant lemon pudding mix and the cold whole milk for 2 minutes until it starts to thicken.
- Spread the lemon pudding layer evenly over the cream cheese layer.
- Spread the remaining whipped topping over the pudding layer, then sprinkle with lemon zest and the remaining 4 crushed Oreos.
- Refrigerate for at least 4 hours (ideally overnight) before slicing and serving.
Notes
- Salt Conversion: We use Diamond Crystal kosher salt. If you are using fine table salt, use exactly 1/8 teaspoon instead of 1/4 teaspoon to avoid over-salting the crust.
- Science of Pudding Hydration: Cold whole milk is essential because the milk proteins and fat globules are needed to properly hydrate and emulsify the modified cornstarch in instant pudding. Lower-fat milks will result in a runny layer.
- Workflow Warning: Do not buy cook-and-serve pudding by mistake. Also, ensure your cream cheese is completely at room temperature before beating, or you will end up with tiny, un-emulsifiable white lumps in your cream layer.
- Storage Behavior: After 24 hours in the fridge, the cookie crust absorbs just enough moisture from the cream cheese layer to transition from a crunchy base to a soft, melt-in-your-mouth cake-like texture.
Serving Suggestions
This dessert is best served chilled straight from the refrigerator. To elevate the presentation, try these simple plating ideas:
- Serve alongside a scoop of No Churn Ice Cream for an ultra-indulgent summer treat.
- Garnish each slice with a fresh mint sprig and a thin wheel of fresh lemon.
- Pair with a hot cup of espresso or a chilled glass of limoncello.
- Dust the top lightly with extra powdered sugar just before slicing.
Storage and Reheating
Keep this dessert tightly covered with plastic wrap or aluminum foil in the refrigerator for up to 5 days.
Do not attempt to freeze this dessert as the emulsion in the instant pudding will break upon thawing, leaving you with a watery mess.
It gets annoying fast when the layers slide.
To prevent this, always use a sharp, clean knife dipped in warm water and wiped dry between every single cut to ensure pristine, picture-perfect layers.
Ingredient Substitutes
If you need to swap some ingredients, here are the best tested alternatives:
- Golden Oreos: You can substitute graham cracker crumbs or vanilla wafers, though you will lose that distinct sandwich-cookie creaminess.
- Whipped Topping: If you prefer homemade whipped cream, stabilize 1.5 cups of heavy whipping cream with 1/4 cup of powdered sugar beaten to stiff peaks.
- Instant Lemon Pudding: If you cannot find lemon, vanilla instant pudding with 2 tablespoons of fresh lemon juice whisked in works in a pinch.
- Cream Cheese: Mascarpone cheese can be used for a richer, slightly less tangy flavor profile similar to a Lemon Tiramisu.
This dessert has become my absolute favorite trick for summer potlucks because it looks like a million bucks but requires zero oven time. If you love layered treats, you should also try our famous Magnolia Bakery Banana Pudding for your next gathering!
