Directions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the oat flour, almond flour, protein powder, baking powder, baking soda, and salt until your wrist clicks and no clumps remain.
- In a blender, combine the cottage cheese, eggs, maple syrup, almond milk, and vanilla extract; blend on high until completely smooth and creamy.

Notes
- We highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, use exactly half the amount (1/4 teaspoon instead of 1/2 teaspoon).
- Use a whey-casein protein powder blend rather than pure whey isolate. Casein absorbs liquid more slowly and structurally mimics flour, preventing the muffins from collapsing or turning rubbery.
- Keep a close eye on the oven around the 15-minute mark. Protein-packed batters brown much faster than traditional sugar-and-butter batters, so tent them with foil if the tops look dark before the centers are fully baked.
