Ingredients
- 2 large boneless, skinless chicken breasts (about 1 lb / 450g), diced into bite-sized pieces
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 3 cups corn kernels (fresh sheared or thawed frozen)
- 1/2 cup non-fat plain Greek yogurt (Fage 0% works beautifully)
- 1/4 cup mayonnaise (Duke's is my absolute favorite)
- 1/2 cup cotija cheese, crumbled
- 1/4 cup red onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 1 jalapeƱo, seeded and minced
- Juice of 1 large lime
- 1/2 tsp Diamond Crystal kosher salt
- 1/4 tsp freshly cracked black pepper
Directions
- Heat olive oil in a large skillet over medium-high heat. Add diced chicken, chili powder, cumin, garlic powder, salt, and pepper. Cook until chicken is golden brown and reaches an internal temperature of 165°F (74°C), about 7-8 minutes. Transfer to a plate and let cool.
- In a dry cast-iron skillet over high heat, add the corn kernels. Let them sit undisturbed for 2-3 minutes to get a deep, smoky char, then stir and char for another 2-3 minutes. Remove from heat and let cool completely.
- In a large mixing bowl, whisk together the Greek yogurt, mayonnaise, lime juice, and Diamond Crystal kosher salt until smooth and emulsified.
- Add the cooled chicken, cooled charred corn, diced red onion, minced jalapeƱo, and chopped cilantro to the bowl with the dressing.
- Toss gently with a rubber spatula until everything is evenly coated in the creamy dressing.
- Fold in the crumbled cotija cheese right at the end so it doesn't completely dissolve into the dressing. Serve immediately or chill.
Notes
- Salt Conversion: I exclusively use Diamond Crystal Kosher Salt. If you are using Morton's, cut the volume in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an over-salted disaster.
- The Cooling Rule: Letting the corn and chicken cool completely before mixing is non-negotiable. Warm ingredients will melt the emulsion of the Greek yogurt and mayonnaise dressing, turning your creamy salad into a watery pool.
- Don't Burn the Corn: When charring the corn in a dry skillet, do not stir constantly. Let the kernels sit undisturbed to achieve that deep, smoky Maillard reaction, but keep a close eye on them so they don't turn to bitter ash.
